Organic production standards are used by actors along the organic production and supply chain as measures for quality assurance and tools for communication and differentiation of organic product and process quality. The results of a literature review show that the main aspects of organic product quality are not considered by the most significant standards for organic production in Germany and hence, these standards are not appropriate measures for the above mentioned purposes.

Die Nachfrage der Konsumenten nach gesunden, sicheren Lebensmittel hoher Qualität steigt. Der ökologische Landbau umfasst die gesamte Prozesskette vom Feld zur Gabel; während aber die EU-Richtlinie (EU 2091/92) den Anbau detailliert beschreibt, fehlen Angaben zur Verarbeitung von Lebensmitteln. Daher müssen Prozessschritte auf ihre Auswirkung auf Lebensmittelsicherheit und vor allem –qualität untersucht werden. Dazu eignet sich eine Analyse kritischer Kontrollpunkte (QACCP). The content of secondary plant compounds in plants is influenced by various environmental factors. Cultivation and fertilization are factors which are characteristic for the farming system organic or conventional. Within a german governmental funded project (BÖL02OE170/F) carrot, maize and wheat samples from different farming systems (defined trials and farm pairs) are differentiated and classified using their polyphenolic and carotenoid contents and profiles, respectively. Background: According to the European regulation N°834/2007, processing of organic food should preserve the essential qualities of the fresh raw material. Thus, assessment of processed food quality should include verification of the absence of additives and contaminants and preservation of the sensorial, nutritional and health values of the raw material. Microcapsule contents or „core“ materials are generally protected from adverse environmental conditions. Microencapsulation in the food industry can be used by every class of food ingredient. The biocrystallization method was standardised on carrot and wheat. With the standardised method samples from different farming systems could be successfully discriminated. For this paper, we investigated to what degree the standardised method can be adapted to other product classes like apples or Aloe vera. We found, that the sample preparation procedures must be developed for each new product whereas the conditions for the steps evaporation and crystallization as well as the evaluation of the patterns could be directly transferred. The variability as well as the factors of influence could be compared to those found on carrot and wheat samples.

Nanotechnology in the context of organic food processing Organic Eprints

Nanotechnology, the science of the ultra small, is up-and-coming as the technological platform for the next wave of development and transformation of agri-food systems. It is quickly moving from the laboratory onto supermarket shelves and our kitchen tables (Scrinis and Lyons, 2007). Therefore we investigated in a literature review and a comparison of the findings with the EU regulation of organic farming to what degree nanotechnology can be applied in organic food production. The regulations do not restrict the use of nanotechnology in general. Because little is known about the impact on environment and human health, precaution should be taken when it comes to applying this technology in organic food production.

Among consumers there is a growing demand for food products with a natural nutritional-physiological advantage over comparable conventional products. As part of an EU funded project, ALP is examining the possible impact of processing on nutritionally valuable milk components, using the example of conjugated linoleic acids (CLA). The Uni Kassel, FG bio-dynamic agriculture, wants to use the capillary dynamolysis according to Wala (Steigbildethode) for milk samples from different collection-days. Based on former methodological investigation (Zalecka 2006) the aim of the study is to show the aging effect and to test, whether a once taken sample represents the farm. Result: the repeatedly taken samples seem to be equal, but variation in the climatic conditions of the chamber as well as aging of the solution have a tremendous influence on the pictures and must be standardised.

TP Organics is the European Technology Platform for organic food and farming, and for low-input agriculture. Established in 2008, it brings together small and medium-sized enterprises, larger companies, farmers, researchers, consumers and civil society organisations involved in the organic value chain from production, input and supply, to food processing, marketing and consumption. It identifies research and innovation needs and communicates them to policy-makers. The aim is to leverage the organic sector’s contribution to sustainable farming and food production. Since 2013, TP Organics is officially recognised by the European Commission as one of 40 European Technology Platforms (ETPs). TP Organics published its first Strategic Research Agenda in 2009....

With the Steigbild technique patterns are produced on thin-layer chromatographic paper and evaluated as a fingerprint of the sample as a whole. To be applied in routine analysis the method has to be standardised according to international standard norms. The operating procedures were documented and a method for the visual evaluation was standardised. Then several factors of influence were tested and the reproducibility was investigated. In dem wachsenden Markt ökologischer Lebensmittel werden Methoden zur produktorientierten Qualitätserfassung gefordert. Dabei geht es u.a. um die Unterscheidung von Produkten aus unterschiedlichen Anbauverfahren. Die Ziele des Projektes waren daher: 1. ausgewählte ganzheitliche Methoden gemäß ISO 17025 zu validieren, d.h. Laborprozesse festzulegen, sowie Einflussgrößen und Verfahrensmerkmale zu bestimmen, 2. zu testen, ob diese Verfahren eine Differenzierung von definierten Proben statistisch abgesichert zeigen können. . Diese Ziele konnten erreicht werden.
