Entwicklung der Methode Biokristallisation für Milchproben Organic Eprints

This study deals with the question under which circumstances (concerning milk and CuCl2-concentration per picture) and with which variation the method of biocrystallisa-tion is able to distinguish different milk qualities. Milk qualities are UHT- and raw milk as well as milk from the beginning (A-milk) and ending (E-milk) of lactation. A matrix from different mixing ratios showed that milk qualities are best visually differentiated by 350µL milk and 175mg CuCl2 per plate. However there exists a certain variation in repeatedly produced pictures of one quality. Therefore 38% of the A- and E-milk-pictures were sorted out because of technical errors (unusual morphology). Um den Verbraucher besser zu erreichen, muss neben der Kontrolle auf Einhaltung der Öko-Richtlinien bei Erzeugung und Verarbeitung künftig verstärkt die ökologische Qualität eines Lebensmittels direkt erfasst und kommuniziert werden. Dazu bedarf es wissenschaftlich validierter Methoden.

Quality analysis of critical control points within the whole food chain and their impact on food quality, safety and health (QACCP) Organic Eprints

The overall objective of the project was to optimise organic production and processing in order to improve food quality and increase health promoting aspects in consumer products. The approach was a chain analysis approach which addressed the link between farm and fork and backwards from fork to farm. The objectives were to test food authenticity on farm level and food quality and health in processing. Im AuthenticFood Projekt wurde eine breite Palette von analytischen Methoden entwickelt und für die Authentifizierung von organischen Pflanzenerzeugnissen validiert. Diese wurden auf Pflanzenproben aus dänischen und italienischen Feldversuche eingesetzt. Es wurde gezeigt, dass mehrere Analyseverfahren das Potenzial haben, die geographische und / oder den landwirtschaftlichen Ursprung pflanzlicher Produkte zu zeigen. Die Element-Fingerprint-Analyse eignet sich besonders für die Bestimmung der geografischen Herkunft. Hier können die Messungen den Einfluss der Bodenmineralogie an verschiedenen geographischen Standorten in Europa auf die Pflanze zeigen. Furthermore, the EU legal regulatory framework for organic food and farming defines high quality of the products as an important goal of production. Quality of carrots as affected by pre- and postharvest factors and processing Organic Eprints

The aim of this review is to provide an update on factors contributing to quality of carrots, with special focus on the role of pre- and postharvest factors and processing. The genetic factor shows the highest impact on quality variables in carrots, causing a 7–11-fold difference between varieties in content of terpenes, β-carotene, magnesium, iron and phenolics as well as a 1–4-fold difference in falcarindiol, bitter taste and sweet taste. Climate-related factors may cause a difference of up to 20-fold for terpenes, 82% for total sugars and 30–40% for β-carotene, sweet taste and bitter taste. In der vorliegenden Arbeit wird der wissenschaftliche Ansatz, die Methode zu validieren beschrieben und der Einfluss der Kammerbedingungen auf die Kristallisation systematisch untersucht und statistisch ausgewertet. Die Klimakonditionen haben einen signifikanten Einfluss auf die Streuung der Werte, sowohl innerhalb eines Kammerdurchgangs, als auch im Vergleich zwischen zwei Kammerdurchgängen. Bei der Einstellung der Startfeuchte auf dem Ring variieren die Feuchtenwerte die dafür erreicht werden müssen von Kammer zu Kammer; weitere Untersuchungen werden zeigen, ob dies auf die unterschiedlichen Abstände beim Aufbau der Kammern (bis zu 2 Jahren Differenz) an den einzelnen Orten zurückzuführen ist (Adaption des Werkstoffes). Zielsetzung des Projektes war es, den aktuellen Stand des Wissens zur Qualität und Verarbeitung ökologischer Lebensmittel sowie zum Verbraucherschutz aufzuzeigen und zu bewerten. Das Projektteam setzte sich aus Wissenschaftlern des Forschungsinstituts für biologischen Landbau (Deutschland und Schweiz), des Büros für Lebensmittelkunde, des Forschungsrings für Biologisch-Dynamische Wirtschaftsweise e.V. sowie des Fachgebiets Ökologische Lebensmittelqualität und Ernährungskultur der Universität Kassel zusammen. Organic agriculture can and should play an important role in solving future challenges in producing food. The low level of external inputs combined with knowledge on sustainablity minimizes environmental contamination and can help to produce more food for more people without negatively impacting our environment. Organisation und Zusammenfassung quantitativer und qualitativer Messdaten im Rahmen des CORE-Organic QACCP Projektes Organic Eprints

Mit der Zusammenfassung der Daten steht am Ende des Projekts nicht nur ein Bericht mit den Befunden der einzelnen Methoden zur Verfügung und den Befunden aus einer Gesamtsicht, sondern auch die Gesamtergebnisse, die auf ihre Integrität hin getestet sind. Dies ermöglicht es, über die Projektlaufzeit hinaus weitere Hypothesen zu prüfen.
