The effect of organic and conventional fruit cultivation system on mineral composition and sensory properties of cloudy apple juice Organic Eprints

The aim was to determine the differences in mineral composition and sensory properties of cloudy apple juice depending on apple cultivation system. Three indigenous Estonian cultivars were chosen on condition that the same cultivars would be grown in organic and conventional orchards at the same geographical location. ’Krameri tuviõun’ and ’Talvenauding’ apples were harvested from old (over 30 years) low maintenance orchard and ‘Krista’ apples from 10-years old experimental orchard. 100 kg of apples per cultivar and cultivation system were stored at +3±2°C for two months and then pressed into juice using Lancman waterpress. Effect of pressing method on the sensory quality of organic apple juice Organic Eprints

There is a need for alternative, gentle processing methods that can be used for processing of organic food products. The pressing methods used for organic apple juice include the slow rack-and-frame press and the faster water press or belt press. The aim was to evaluate the influence of these three pressing methods on the sensory quality of cloudy organic apple juice produced from two apple cultivars.

Deposition of carotenoids in egg yolk by short-term supplement of coloured carrot (Daucus carota) varieties as forage material for egg-laying hens Organic Eprints

BACKGROUND: Supplying egg-laying hens with different forage materials may influence egg production and quality. The aim of this study was to examine the short-term effects of standard feed plus 70 g day−1 per hen of three coloured carrot varieties (orange, yellow and purple) as forage material in comparison with a standard feed control on egg production, egg yolk colour and deposition of carotenoids in the yolk. RESULTS: Carrot supplementation reduced feed intakes significantly, but not on a dry matter basis. Orange carrot treatment significantly reduced egg mass production, whereas yellow and purple carrot treatments did not differ from the control. The eating quality of carrots (Daucus carota L.) was investigated to evaluate the impact of cropping systems (one conventional and three organic systems) and growing years (2007, 2008, and 2009) on root size, chemical composition, and sensory quality. The content of dry matter, sugars, polyacetylenes, and terpenes as well as the sensory quality and root size were related to the climate during the three growing years. A higher global radiation and a higher temperature sum in 2009 as compared to 2007 and 2008 resulted in larger roots, higher contents of dry matter, sucrose, total sugars, and total polyacetylenes, and lower contents of terpenes, fructose, and glucose. The effect of nutrient supply on the baking quality of organic wheat cultivars Organic Eprints

Five different wheat cultivars (Thifun, Triso, Thasos, Spelt and Emmer) were cultivated in an organic study using six different organic compost types (two different household waste composts, sewage sludge compost, fruit and vegetable compost and two different renescience compost types) and one control with no manure applied. Bread was baked with flour from each of the samples. The protein content, the gluten content and the falling number were measured for the flour samples and specific volume, the sensory quality and instrumental measured hardness were measured on the bread samples. To ensure a high, stable production of blackcurrant juice in Denmark, it is necessary with high-yielding blackcurrant cultivars, which are resistant against pest and diseases, and that have a high sensory quality and high health value. In this experiment, blackcurrant juice processed from berries of 12 organic cultivars was screened. A trained sensory panel using descriptive sensory profiling evaluated the sensory quality of the juice samples. In addition, the aroma profile and the content of vitamin C were determined in the juice samples. The industrial transformation of tomato (Lycopersicon esculentum Mill.) produces processed foods, such as dried tomatoes. In this study two varieties (SaAb and PerBruzzo), grown in three cropping systems (one conventional and two organic ones), were processed by two types of small-scale drying (oven or sun drying), over two years of production. The dried samples were analyzed for their non-volatile and volatile composition, relating the results with sensory analysis. Eleven different wheat cultivars (Thaifun, Triso, Thasos, Trappe, Amaretto, Diskett, Økilde, Dache, Koga, Spelt and Emmer) were cultivated in an organic study using three different organic treatments (no manure, household waste compost and sewage sludge compost). In addition to improved yields, the use of organic methods can benefit the nutritional value of foods in several ways, compared with subsistence agriculture, and in some respects also when compared with the use of high-input conventional farming methods. The recycling of organic matter retards depletion of the soil and ensures that increases in yield are not offset by mineral deficiencies caused by unbalanced plant nutrition. City populations can use organic products to minimize their intake of pesticide residues and nitrate. Improved nutritional status of crops under low-input conditions can increase the contents of protein and vitamin A, but can also increase the contents of some anti-nutrients.
