The motivation for this study is the lack of knowledge of millers' preferences for noodle wheat in Asia, where noodle wheat is an expanding market segment. Data for the study are from interviews and questionnaires completed by millers in South Korea and Japan. Two different methodologies were applied--stated preference methods and semantic differential scales. Consistent results are seen from each method. Millers' choices of wheat with varying characteristics were analysed with multinomial logit models. These estimates are used to identify millers' preferred product profiles for various types of wheat and flour. Estimates are reported in the paper for millers' preferences for intrinsic quality features and trade contract terms for major types of wheat.... |

While the demand for wheat flour for bread is relatively static in both Japan and South Korea, consumer markets for noodles in both countries are growing in importance. Each of the two countries depends heavily on milling-wheat imports since there is very little domestic wheat production. Canadian wheat exports represent only a small share of South Korean wheat imports and about 25 percent of the wheat imported by Japan. The South Korean wheat import market was deregulated in 1990. The liberalization of wheat imports and deregulation of the Korean milling sector have intensified competition in the flour milling industries in that market. Korean Hanwoo beef producers are interested in improving the image of Hanwoo beef for Korean consumers, as the Korean beef market is becoming increasingly open to international competition. This study examines the consumer profile and positioning for the Hanwoo beef product in South Korea. A survey of 480 consumers is conducted to analyze preferences for 33 attributes of beef purchasing decisions. Factor analysis was used to determine factors that are important in beef purchasing decisions, and cluster analysis was used to identify a niche market for branded Hanwoo beef. Japan imports 6.3 MMT of wheat annually and consumes almost 35 percent of this in the form of noodles. The purpose of this paper is to report on a study that evaluates the preferences of Japanese millers for the various characteristics of wheat and flour that are used in noodle making in Japan. The study used stated preference methodologies (SPM), that were developed and pre-tested through initial interviews with Japanese flour millers. In total, 57 purchase and quality managers for 22 Japanese milling companies were surveyed by means of direct interviews and 41 respondents completed the full SPM survey.
