There are various food safety issues related to the traditional production of smoked fish in Ghana, especially with regard to the safety requirements of importing nations. These issues include mercury and histamine contamination, smoke and microbiological safety. This paper discusses the methods that can be used in the field or in the laboratory to test for food safety, as well as the feasibility of implementing quality assurance in fish production. Since fish smoking in Ghana is the domain of women, gender issues linked to the introduction of new technologies for smoking fish are taken into account. |

AllermatchTM (http://allermatch.org) is a novel web tool for the efficient and standardized prediction of potential allergenicity of proteins according to the current recommendations of the FAO/WHO Expert Consultation, as outlined in the Codex alimentarius. A query amino-acid sequence is compared against the Allermatch- Allergen database based on current SwissProt and WHO-IUIS allergen lists. The web tool uses a sliding window to identify stretches of 80 amino acids with more than 35% similarity, or identical small stretches of at least six amino acids. The outcome of the analyses is presented in a concise format. The potential allergenicity of novel proteins expressed in genetically modified organisms is an important item in the safety assessment of these organisms. The various components of the allergenicity assessment include the source of the protein, sequence similarity with known allergenic proteins, in vitro digestibility, sera binding tests, animal models and clinical tests. Recent developments in the field of bioinformatics studies on the sequence similarity of novel proteins with allergenic proteins, as well as in vitro digestibility, are discussed. |

Two main traits that have been introduced into genetically modified crops that are currently on the market, viz., herbicide and insect resistance, likely affect pesticide use on these crops. Various surveys have been carried out, such as those of the USDAERS and NCFAP, comparing the pesticide use on genetically modified versus conventional crops. Environmental indicators for pesticides may aid in comparing the outcomes of such assays in terms of environmental impact. Previously we applied one indicator, the Environmental Impact Quotient, to pesticide-use data for commercial biotech crops from a recent survey by NCFAP and found that, by this method, the impact paralleled the decreased use of pesticides.
