Sensory profile of breast meat from broilers reared in an organic niche production system and conventional standard broilers Organic Eprints

BACKGROUND: A sensory panel evaluated the sensory profile of breast meat from five broiler products: two conventional standard products (A and B) and three organic niche genotypes (I657, L40, K8) reared in an apple orchard. RESULTS: Twenty-two sensory attributes were evaluated, and 13 differed significantly between the products. The aromas ‘chicken’, ‘bouillon’ and ‘fat’ scored highest and the ‘iron/liver’ aroma lowest for the niche products. The meat was more ‘tender’, ‘short’ and ‘crumbly’, and less ‘hard’ and ‘stringy’ in the standard products than in one or more of the niche products. Product ‘I657’ was less ‘juicy’ than the rest. ‘I657’ and ‘L40’ were more ‘cohesive’ and tasted more ‘sourish’ and less of ‘sweet/maize’ than the standard products....

Danske forsøg tyder på undersøger om træer i svinefoldene kan mindske kvælstofudvaskning, og engelske forskere undersøger, om træerne måske også kan reducere ammoniaktabet fra udegående dyr. Træer i svinefoldene kan muligvis ikke alene være med til at holde på kvælstoffet i jorden. De kan eventuelt også være med til at begrænse ammoniaktabet fra udendørs svinehold. Det tyder engelske forsøg på, som blev præsenteret på en workshop for danske og udenlandske ammoniakeksperter, rådgivere og repræsentanter fra myndighederne i sidste uge. Boar taint in very small organic entire male pigs - preliminary results Organic Eprints

Very small entire male pigs can be part of a new concept of organic seasonal production of pigs. The concept includes outdoor production of small entire male pigs, very large female pigs and sows slaughtered after first litter. The entire males and the sows are slaughtered in the summer and the female pigs gilts in December. The purpose of the very small entire male pigs is to avoid castration and boar taint at the same time. In order to make the concept special regarding product quality and image, different crossbreeds are considered including a traditional Danish breed. Two seasons (2007 and 2008) are planned. Results of the 2007 season are presented.

Temadagen var en dansksproget forlængelse af en videnskabelig workshop om økologisk svineproduktion, som blev holdt på engelsk dagen forud. (Temadagen afsluttedes desuden med det ene - af to halvårsmøder - for Friland) Temadagen gav producenter og andre interesserede mulighed for at få indblik i den nyeste forskning inden for økologisk svineproduktion. Folkene frafem igangværende forskningsprojekter var sammen om at arrangere dagen, som startede med besætningsbesøg hos Nicolaj Pedersen, Hovborg.

Selv om der de sidste fire år har været en kraftig stigning i den økologiske svineproduktion i Danmark, udgør den økologiske slagtesvineproduktion mindre end 0,5% af den totale slagtesvineproduktion, og erfaringsgrundlaget for gennemførelsen af den økologiske svineproduktion er derfor spinkelt. I mange tilfælde er svineproduktionen indrettet således, at søerne holdes på friland, mens slagtesvinene året rundt opstaldes i stalde med tilhørende udearealer, og det er for sådanne systemer, at videngrundlaget er bedst.

Slagtesvin i frilands- og økologiske besætninger har brug for bedre udearealer. Derfor vil projektet pECOSYSTEM nu bl.a. teste, hvordan særligt indrettede områder med forskellige rodematerialer påvirker svinenes adfærd. Frilands- og økologiske svin der opfedes på stald skal have adgang til udearealer. Det er vigtigt for produktionens troværdighed, at dyrene kommer ud i det fri, men udearealerne fungerer ikke altid hensigtsmæssigt. Grisene har generelt brug for mere stimulirige udemiljøer, end de har i dag. Possible reasons for the low market share of organic pork may be heavy price competition with conventional produced pork products combined with no or small distinctive characteristics in appearance and quality, both regarding eating quality (flavour, tenderness) and ethical quality (production methods). Den gamle svinerace, Dansk Sortbroget Landrace, har måske en fremtid i økologisk svineproduktion. Det er vigtigt, at økologisk svinekød adskiller sig markant fra konventionelt mht. smag, udseende og den måde grisene opdrættes på, hvis forbrugeren skal være villig til at betale en betydelig merpris. Det er idéen bag et flerårigt forskningsprojekt ved Aarhus Universitet, hvis formål er at bidrage til udvikling af en mere forskelligartet økologisk svinekødsproduktion med høje standarder for spisekvalitet og etisk kvalitet.

Forbruget af økologisk svinekød i Danmark er steget markant de senere år, men på trods af dette er markedsandelen stadigvæk meget ringe. Kun 1% af det svinekød, der købes i Danmark, er økologisk produceret. Dette er væsentligt lavere end f.eks. økologisk mælk og økologiske æg, som har markedsandele på hhv. 35% og 27% (Gfk, 2009). En af forklaringerne kan være en betydelig merpris for økologisk svinekød sammenholdt med, at økologisk svinekød ikke i sig selv adskiller sig fra konventionelt svinekød. Sow body condition at weaning and reproduction performance in organic piglet production Organic Eprints

The objective was to investigate the variation in backfat at weaning and its relations to reproduction results in organic sow herds in Denmark. The study included eight herds and 573 sows. The average backfat at weaning mean�13 mm; SD�4.2 mm) ranging from 10.5 to 17.3 mm among herds shows that it is possible to avoid poor body condition at weaning even with a lactation length of seven weeks or more. No main effect of backfat at weaning on reproduction performance was found, but the probability of a successful reproduction after weaning tended to decrease with decreasing backfat for first parity sows, whereas the opposite was the case for multiparous sows.

Organic food production is developing rapidly in Europe and other parts of the world. An important principle in organic production is “to provide living conditions that allow animals to express the basic aspects of their innate behaviour” (IFOAM, 2002). This principle is accentuated in the European regulations on organic production as “the livestock shall have permanent access to open air areas, preferable pasture” (EC No 834/2007).
