This study is based on micro level data on urban household food consumption and expenditure collected between 1999 and 2000 in three Nigerian cities. The LA/AIDS model, which allows the inclusion of demographic variables, was applied to a subset of the data on meat and meat products namely beef, mutton/goat, chicken, fish, eggs, and milk. Results indicate that urban demand for meat products will continue to increase as incomes improve, suggesting potential market opportunities especially for poultry. Intra-household demand patterns clearly indicate the importance of beef for children but contrary to expectations, there is a reduced demand for milk as the number of infants in urban households increase. This study addressed the issue of gender and agricultural commercialization among smallholders in Nigeria with ginger as a case study. It focused on the relative or absolute roles, gains and losses by men and women farmers as a result of commercializing small ginger farm. Ginger is a crop grown mainly for cash in Nigeria. Nigerian ginger is known to produce very high quality essential oils mainly oleoresin and gingerol used in confectionery and pharmaceutical industries. This study links food insecurity status of farming households in the study area to their income diversification strategies. Data for the study were collected from 400 farming households in Osun State of the southwestern Nigeria. Households were classified into four categories based on how they obtain a living. Descriptive statistics, Cost of Calorie Function (COC) and Analysis of Variance (ANOVA) were used to analyze the data.
