Organic large scale dairy farming – a model study of the effect of stocking rate and distance from dairy facilities to farm land on productivity, nutrient balance and economic result Organic Eprints
Kristensen, T.; Tvedegaard, N.; Kristensen, I.S..
Organic livestock farms, at least in the northern part of Europe, are dominated by rather specialized units with production based on only one type of livestock, as dairy cows. The specialization is followed by a steady increase in size of the production unit, both in number of livestock and area belonging to the farm. In Denmark has the average organic dairy farm changed from 83 cows and 100 ha in 2000 to 136 cows and 172 ha in 2010; also production per cow has increased in this period from 6825 kg milk annually to 8100 kg in 2010. Such rather large changes over a decade often results in layout of the farm with long distance from the dairy facilities to the farm land. In organic dairy farming this is especially challenging as the dairy herd need to have...

Feed Supplements for Young Dairy Breed Calves After Turn-Out to Pasture: Effect on Weight Gain and Subclinical Coccidiosis in Organic Production Systems Organic Eprints
Nielsen, B.K.; Thamsborg, S.M.; Kristensen, T..
On two organic farms, the effect of supplementation with either home-grown barley or organic commercial concentrates primarily based on local protein sources and barley, on weight gain and subclinical coccidiosis was investigated in 3-5 months old dairy breed calves in the period after turn-out to ryegrass/clover pastures. The calves (mean liveweight ± SD, 124 ± 24 kg and 133 ± 24 kg on Farm I and II respectively) were supplemented daily with 3 kg energy and protein-rich commercial concentrates (group EP), 3 kg barley (group E) or ½ kg barley (group Eres) for 8 weeks following turn-out on pasture. Daily weight gains in the 8 weeks were for Farm I: 1216 and 1042 g/day for group EP and E (P < 0.01) and for Farm II: 1071, 671 and 770 g/day for group EP,...

Self-sufficiency with vitamins and minerals on organic dairy farms Organic Eprints
Mogensen, L.; Kristensen, T.; Søegaard, K.; Jensen, S.K..
Self-sufficiency of nutrients is a central element in the organic farming principles. In a project involving five private organic dairy farms, we aimed to achieve self-sufficiency in vitamins and minerals at farm level. All the herds are fed 100% organically grown feed, but so far supplements of minerals and vitamins based on inorganic and synthetic products are imported to all farms. The same level and type of supplement was used for the cows all year round, even though all cows were on grass for at least 150 days during the summer period. The average daily intake from the supplement for a lactating cow was 751 mg E vitamin, 111 mg Cu, and 558 mg Zn. The content of vitamin and minerals in the home-grown feeds was modelled taking into account the effect...

Effect of toasting field beans and of grass-clover: Maize silage ratio on milk production, milk composition and sensory quality of milk Organic Eprints
Mogensen, L.; Vestergaard, J.S.; Frette, X.; Lund, P.; Weisbjerg, M.R.; Kristensen, T..
The effect of toasting field beans and of grass-clover: maize silage ratio on milk production, milk composition and sensory quality of the milk was investigated in a 2*2 factorial experiment. Toasting of field beans resulted in lower contents in milk of both fat (44.2 versus 46.1 g/kg, P = 0.02) and protein (33.5 versus 34.2 g/kg, P = 0.008), whereas milk production and urea and somatic cell contents were unaffected compared with untreated field beans. Increasing the proportion of maize silage (from 2 to 5 kg DM/cow/day) in the ration decreased the content of urea in milk (P=0.002), whereas milk production and fat and protein contents were unaffected. Milk from cows fed the high proportion of maize silage had a lower (P=0.04) content of the long chain...

Herbage and milk productivity and quality when grazing different legumes and herbs Organic Eprints
Eriksen, J.; Søegaard, K.; Kristensen, T.; Fretté, X.C.; Wiking, L.; Holm Nielsen, J..
In order to evaluate how different legumes and herbs affects the quality of organic milk a grazing study was performed at the organic research station Rugballegaard with 48 dairy cows. Swards with Lucerne (Medicargo sativa), red clover (Trifolium pratense), white clover (Trifolium repens) and white clover together with chicory (Cichorium intybus), respectively, were established in 2005 together with perennial ryegrass (Lolium perenne) in two replicates. The study was carried out in 2006 over three two-weeks periods during the season. Generally, the proportion of legumes and chicory was high in the four species mixtures. Sward composition highly affected grazing behaviour. Sward height measurements indicate that the white clover mixture was eaten without...

Hay production in North Europa Organic Eprints
Kristensen, T.; Søegaard, K..
Hay feeding might have some advantaged in relation to herd health and reduces the risk for contamination of the milk with spores. Hay production compared to silage is more resource intensive – like use of energy for drying. Hay from two types of herb enriched grass swards and the traditional grassland showed no difference in intake or milk production when compared at three organic farms. Feed efficiency tended to be lower than standards based on silage feeding.

Dårlig arrondering – konsekvenser for økologiske kvægbrug Organic Eprints
Kristensen, T.; Kristensen, I.S.; Tvedegaard, N..

Animal production from dairy breed steers at extensively managed grasslands in riverside areas Organic Eprints
Nielsen, A.L.; Kristensen, T.; Badsberg, J.H..
In Denmark, some of the grassland in marginal areas are abandoned for agricultural use - grassland that it is of interest to preserve because they have a high actural or potential natural quality when managed with extensive grazing or cuttting. A comparison was carried out for three years on sward productivity and weight gain of the steers at two grazing intensities on wet semi-natural grassland. The daily weight gain of steers was on average 667 g at low and 477 g at high grazing intensity. Sward grass yield as dry matter (DM) production was on average 4.1 Mg DM ha4, with no significant difference sound between the two gazing intensities. In vitroorganic matter digestibility (IVOMD) was rexpectigely 56.4 and 53.0 at high and low grazing intensity. It is...

Organic livestock systems: characteristics and challenges for improvement Organic Eprints
Hermansen, J.E.; Kristensen, T.; Ronchi, B..
There is generally a growing interest for organically produced food in Europe and North America, although in some countries the interest is stagnating. Organic animal productions in some countries make up to 10% of total production. The development of organic farming is driven by a mutual interest among: farmers who are sceptical towards the methods of conventional farming or aim for possible premium prices; consumers perceiving the products to be safer; and authorities seeing organic farming as a tool to reduce environmental load of the livestock farming systems. Existing evidence shows that levels of production experienced in organic production are often moderately reduced compared to conventional production or in some cases considerable lower (piglets...

Herbage intake in Danish Jersey and Danish Holstein steers on perennial ryegrass/white clover pasture Organic Eprints
Nielsen, B.; Thamsborg, S.M.; Andersen, H.R.; Kristensen, T..
The objective of this study was to estimate herbage intake in Danish Friesian and Danish Jersey steers at an age of 8-9 months on ryegrass / white clover pasture. The steers were turned out on pasture in late April and herbage intake was estimated in June in steers of a mean live weight (± S.D.) of 264 ± 14 kg and 185 ± 25 kg for Danish Friesian and Danish Jersey respectively. Faeces and herbage samples were analysed for alkanes to estimate herbage dry matter intake, dry matter digestibility (DMD) and botanical composition of intake. The weight gains at the time of herbage intake estimation in June (kg/day) were 1.142 ± 265 kg/day and 0.927 ± 168 kg/day for Danish Friesian and Danish Jersey respectively. Daily herbage intake (kg dry matter (DM)) estimated...

Sensory quality of organic milk based on grazing and high ratio of legumes in the feeding ration Organic Eprints
Vestergaard, J. S.; Kristensen, T.; Eriksen, J.; Søegaard, K.; Fretté, X. C.; Bredie, W. L.P..
Organic milk forms an important segment of the fresh milk production in Denmark. However, studies are needed to substantiate the high quality and future development of new variations of organic milk for different consumers. Differences in the composition of organically and conventionally produced milk (free fatty acids and a higher content of antioxidants in organic milk) are suggested to be a result of differences in feeding regimes (maize components in conventional production vs. grass and legumes in organic production). Also, milk from dairy cows fed grass silage has a different flavour compared to milk from dairy cows fed maize silage. This study evaluated the sensory properties of organic milk from dairy cows from different feeding trials. The...

Effects of grazing system on production and parasitism of dairy breed heifers and steers grazing wet marginal grasslands Organic Eprints
Kristensen, T.; Thamsborg, S.M.; Andersen, H.R.; Søegaard, K.; Nielsen, L..
Production and endoparasitism in first grazing season of Holstein heifers and steers were investigated in two grazing seasons, at low-lying peaty soil. In year 2000, forty animals were included in a 2 x 2 factorial, replicated experiment with two sexes (steers vs. heifers) and two stocking rates (SR): normal vs. low (840 vs. 420 kg live weight per ha at turn out) in a set stocking grazing system. Mean grass height over the entire season were 6.3 ± 4.8 cm (mean ± s.d.) at normal SR and 9.8 ± 6.1 cm at low SR. Mean daily live weight gain during grazing was significantly (P < 0.001) lower at normal SR (256 ± 147 g) compared to low (468 ± 142 g) but sex did not significantly affect the daily gain. Serum-pepsinogen levels, indicating uptake of...

How can the organic dairy farmer be self-sufficient with vitamins and minerals? Organic Eprints
Mogensen, L.; Kristensen, T.; Søegaard, K.; Jensen, S.K..
The aim of the present paper is to present a prototype of a decision support model simulating the feed and vitamin supply during a year on a farm self-sufficient with feed. The model takes into account that the content of vitamin and minerals depends on choice of crops, conservation method, season, plant development at harvest, quality of the silage production, and duration of storage together with traditional optimizing of the feeding scheme.
