Adding value to vegetable waste: Oil press cakes as substrates for microbial decalactone production Organic Eprints
Laufenberg, Günther; Rosato, Pietro; Kunz, Benno.
In this study several oil press cakes were investigated as exclusive substrates for different moulds and yeasts for the production of flavor-active decalactones via solidstate fermentation (SSF). Experiments are focused on pre-treatment methods for olive cake to remove antimicrobial phenolic substances contained in the oil cake disturbing or even inhibiting microbial growth. Choosing Ceratocystis moniliformis as the reference microorganism best results were obtained by a combination of hot water flushes and enzymatic treatment of the cake. Fermentation with sunflower, olive and linseed cake did not lead to lactone formation in detectable amounts although all of these substrates provided good microbial growth. On castor cake, however, five microorganisms...

Antifungal activity of phenolic compounds extracted from dried olive pomace Organic Eprints
Winkelhausen, Eleonora; Pospiech, Robert; Laufenberg, Günther.
The antifungal activity of phenolic compounds extracted from olive pomace against Alternaria solani, Botrytis cinerea and Fusarium culmorum was investigated. Olive pomace, a by-product of olive oil production, was used as a source of phenolic compounds. The extracted phenolics were added to a medium to reach phenol concentration of 0,1 and 0,2 %(w/v) and tested for their antifungal activity against the three fungi. In addition, the fungi were cultivated in a medium containing a commercial fungicide in the concentration of 0,2 % (w/v). Both of the phenolic concentrations inhibited the growth of all three fungi with the higher being more effective. It resulted in a four-fold reduction of the mycelial growth rate of A. solani and F. culmorum. The present...

Growth inhibition of moulds by natural pesticides derived from olive oil residues Organic Eprints
Winkelhausen, Eleonora; Pospiech, Robert; Laufenberg, Günther.
Synthetic crop protection agents play an essential role in the protection of plants or harvested fruits against microorganisms. They are effective and economically advantageous but, by modern standards, they lack selectivity and applied at high rates they are threat to human health and environment. Complying with the growing public awareness of these hazards, increasing emphasis is placed upon the search for novel, natural products with pesticidal activity. Phenolic compounds, present in the olive fruit, definitely belong to this group.

Transformation of vegetable waste into value added products: (A) the upgrading concept; (B) practical implementations Organic Eprints
Laufenberg, Günther; Kunz, Benno; Nystroem, Mariann.
Waste can contain many reusable substances of high value. Depending on there being an adequate technology this residual matter can be converted into commercial products either as raw material for secondary processes, as operating supplies or as ingredients of new products. Numerous valuable substances in food production are suitable for separation and recycling at the end of their life cycle, even though present separation and recycling processes are not absolutely cost efficient. In Part A a need statement is visualised––based on a holistic concept of food production-–for the vegetable industry, recording occurrence, quantities and utilisation of the residual products. A literature survey, covering more than 160 articles from all over the world, plus our...
