Effect of tomato variety, cultivation, climate and processing on Sola l 4, an allergen from Solanum lycopersicum Organic Eprints

Tomatoes (Solanum lycopersicum) are one of the most consumed vegetables worldwide. However, tomato allergies in patients suffering from birch pollen allergy occur frequently. Due to highly similar protein structures of the tomato allergen Sola l 4 and the major birch pollen allergen Bet v 1, patients cross-react with allergenic proteins from tomato as well as other fruits or vegetables. The aim of this study was to quantify Sola l 4 in various tomatoes differing in color, size and shape for identification of varieties with a reduced allergen level. The effect of organic and conventional fruit cultivation system on mineral composition and sensory properties of cloudy apple juice Organic Eprints

The aim was to determine the differences in mineral composition and sensory properties of cloudy apple juice depending on apple cultivation system. Three indigenous Estonian cultivars were chosen on condition that the same cultivars would be grown in organic and conventional orchards at the same geographical location. ’Krameri tuviõun’ and ’Talvenauding’ apples were harvested from old (over 30 years) low maintenance orchard and ‘Krista’ apples from 10-years old experimental orchard. 100 kg of apples per cultivar and cultivation system were stored at +3±2°C for two months and then pressed into juice using Lancman waterpress. Total soluble solids (TSS), titratable acidity (TA) and content of P, K, Ca and Mg were determined from apples and from juice....

Impact of drying techniques, seasonal variation and organic growing on flavor compounds profiles in two Italian tomato varieties Organic Eprints

The industrial transformation of tomato (Lycopersicon esculentum Mill.) produces processed foods, such as dried tomatoes. In this study two varieties (SaAb and PerBruzzo), grown in three cropping systems (one conventional and two organic ones), were processed by two types of small-scale drying (oven or sun drying), over two years of production. The dried samples were analyzed for their non-volatile and volatile composition, relating the results with sensory analysis. The multivariate analysis performed on collected data allowed a detailed comparison of the effects of processing, year-to year variation and cropping systems. Effect of the Strawberry Genotype, Cultivation and Processing on the Fra a 1 Allergen Content Organic Eprints

Birch pollen allergic patients show cross-reactivity to vegetables and fruits, including strawberries (Fragaria × ananassa). The objective of this study was to quantify the level of the Fra a 1 protein, a Bet v 1-homologous protein in strawberry fruits by a newly developed ELISA, and determine the effect of genotype, cultivation and food processing on the allergen amount. An indirect competitive ELISA using a specific polyclonal anti-Fra a 1.02 antibody was established and revealed high variability in Fra a 1 levels within 20 different genotypes ranging from 0.67 to 3.97 μg/g fresh weight.
