Effect of modified clays on the structure and functional properties of biofilms produced with zein Ciênc. Tecnol. Aliment.

The purpose of this study was to evaluate changes in the structure and some functional properties of biofilms added with modified clays (Cloisite® 15A and Cloisite® 30B) prepared by the casting method. The analysis of the microstructure of the films, scanning electron microscopy (SEM), Optical microscopy (MO), and Infrared Spectroscopy (FTIR) indicated that the addition of clay in the films resulted in the formation of a heterogeneous microstructure, microcomposite or tactoid. Due to the formation of a microcomposite structure, functional properties of the films added with both clays such as opacity, solubility, and permeability to water vapor (PVA), were not better than those of the control film. Processamento da carne do jacaré do pantanal (Caiman crocodilus yacare) Ciênc. Tecnol. Aliment.

Trata-se de um estudo de algumas formas de processamento da carne de jacaré do pantanal como uma alternativa de consumo, de uma forma não convencional, da carne dessa espécie. Testa-se, ao mesmo tempo, a utilização de carne de cortes normalmente descartados tais como o tronco e os membros. Dessa forma relatam-se os seguintes processamentos: produtos de salsicharia não embutidos (tipo hambúrguer), carne em conserva (enlatado), carne curada e não cozida (defumada) e produto curado e cozido (tipo apresuntado). Avalia-se a qualidade dos produtos através da análise sensorial e mede-se estatisticamente o grau de sua aceitação.

Distribution of aflatoxin contamination in maize samples Ciênc. Tecnol. Aliment.

The distribution of the aflatoxin contamination was studied among four maize fractions, separated according to Brazilian grading rules for maize. The fraction that contained fermented, moldy, heated and sprouted grains normally had the highest levels of aflatoxin. However, the fraction contribution to the whole sample contamination level took into account the contamination fraction level and its weight to the whole sample. Considering this, the fraction that contained insect damaged, hollow, up to ¼ fermented and grains damaged by other causes was normally the fraction responsible for the total contamination level in the samples. Characterization of biodegradable film based on zein and oleic acid added with nanocarbonate Ciência Rural

Zein oleic acid films added with 1, 2 and 3 % (w/w) of nanocarbonate and 30 % glycerol as plasticizer, were produced and evaluated according to their structure and functional properties. Structural characteristics were analyzed by optical and scanning electron microscopy (SEM). Water solubility and mechanical properties were determined according to ASTM methods. The increase of nanocarbonate concentration increased water solubility and influenced the color and mechanical properties. Optical and SEM of film samples added with nanocarbonate, shown low amount of pores and great fat globules size.

The effect of encapsulants on the heat of sorption in vacuum-dried cajá powder Rev. Ciênc. Agron.

ABSTRACT Equilibrium moisture data from the powdered pulp of Spondias mombin, L., both with and without additives - 58% maltodextrin (MD) or 58% gum arabic (GA) - were determined at 20, 30, 40 and 50 °C, using the static gravimetric method for a water activity range of 0.06 to 0.90. The resulting isotherms were sigmoidal and typical Type III, with the Guggenheim-Anderson-de-Boer model (GAB) adjusted to the experimental data for equilibrium moisture vs water activity. The addition of additives was shown to affect the isotherms in such a way that, for the same water activity, samples of CP+GA and CP+MD showed a lower equilibrium moisture content and were not affected by the variations in temperature.
