Atividade antioxidante do beta-caroteno e da vitamina A. Estudo comparativo com antioxidante sintético Ciênc. Tecnol. Aliment.

Foi avaliada a atividade antioxidante da vitamina A na forma de acetato de retinol e de seu principal precursor, o beta-caroteno, adicionados a um sistema de óleo de soja previamente sensibilizado à oxidação. Os parâmetros utilizados como grau de atividade oxidativa foram: índice de peróxidos, teores de malonaldeído durante os intervalos de 24 a 72 horas, e perfil dos ácidos linoléico e linolênico após 144 horas de oxidação. Pelos resultados pode-se verificar que o retinol apresentou atividade antioxidante superior ao beta-caroteno. As determinações das atividades antioxidantes foram comparadas à do butilhidroxitolueno (BHT). Characterization of constituents, quality and stability of pomegranate seed oil (Punica granatum L.) Ciênc. Tecnol. Aliment.

Abstract This study aimed to characterize pomegranate seed oil and evaluate its quality and stability parameters against those of linseed oil. The profile of fatty acids and phytosterols and the content of tocopherols were analyzed by gas chromatography and high performance liquid chromatography, respectively. The quality of both oils was assessed as recommended by the American Oil Chemists' Society (AOCS) and stability was evaluated using 2,2-diphenyl-1-picrylhydrazyl (DPPH), β-carotene bleaching (coupled oxidation of β-carotene/linoleic acid) and Rancimat® assays. Abstract Pomegranate and bitter gourd are two of the few edible fruits that contain conjugated α-linolenic acids (CLnAs) in their seeds. The CLnAs have been associated with many effects that are beneficial to health, such as antioxidant and anti-inflammatory properties. Samples of cold-pressed oils from pomegranate and bitter gourd seeds were evaluated for their phytochemical compositions (fatty acids, tocopherols and phytosterols), their qualities and their stability parameters. Abstract Like other beehive products, such as honey, royal jelly and propolis, bee pollen has attracted great interest because of the health benefits it can provide when consumed. Bee pollen has high contents of sugars and proteins and a low content of lipids, it is also a rich source of vitamins and other bioactive compounds, which makes it an attractive micronutrient supplement. Grape seed oil (GSO) is not often consumed in Brazil and little is known of its nutritional value. Around the world there are already studies that point to the high levels of minority bioactive compounds and their relation to health benefits. The main constituent of GSO is linoleic fatty acid, some works are controversial and there is no consensus in literature regarding their effect on the animal organism. Thus, this study aimed to present a review of GSO and show the potential health effects of its major components, not only linoleic acid, but also γ-tocotrienol and β-sitosterol, and finally, their influence on lipid-modulating, anti and pro oxidative parameters.

Abstract Grape seed oil (GSO) is an important by-product of the wine-making industry which has received attention as an alternative source of vegetable oils; its chemical compounds can be influenced by agricultural practices and industrial processing. Knowledge of the composition of Brazilian GSO is scarce; thus, this study aimed to analyze the chemical characteristics, as well as the antioxidant activity of these oils. GSO samples were obtained from Brazilian markets and showed significantly high amounts of phenolic, γ-tocotrienol and phytosterols as well as, the presence of several volatile compounds.
