The hypothesis of this research is that the impact of quality dimensions on consumers’ willingness to buy organic vs. conventional or free-range chicken is partly mediated through taste expectations. The study comprises two exploratory focus group studies, followed by a questionnaire containing a conjoint analysis design. The purpose of the focus groups was to determine the most important quality cues, which could afterwards be incorporated into the choice experiment. The expansion of the organic food market and the growing competition are factors that fuel the differentiation of organic food products. Differentiation may be achieved by developing “organic-plus” products that integrate other value-adding characteristics beyond the organic quality. In this context, the aim of this study was to explore whether consumers would notice and value further improvements in the animal welfare standards than those imposed by organic regulation. This short report represents a summary of the analysis conducted so far on the GfK Panel Data. The focus was on the main three types of raw meat: chicken, pork, beef, as well as three categories of processed food products: liver paste, cold cuts and sausages. The aim was to look at the market indicators for each one of the six sub-categories, out of which market share and penetration were considered to be the most important. Besides these two indicators, I also included some extra calculations for each category, which can be analysed further and more in-depth if needed. High prices are often reported as an obstacle that inhibits the purchase of organic food products. The aim of this paper is to investigate how organic food products perform at different price levels and whether high prices are an advantage or a disadvantage for consumers’ repeat purchase of organic food. Based on analyses of actual purchase data, this study explores the effect of two product attributes (production method and price) on repeat purchase. Recent studies reveal that consumers respond favourably to “organic plus” products with additional ethical attributes. The aim of the current study is to explore whether consumers would notice and value further improvements in the animal welfare standards than those imposed by the organic regulation. This report concerns the analysis of successful high-value products as case studies in each of the three meat categories: chicken, beef and pork. The main objective of our study was to identify strategic groups within the meat market, in which the new, high-value organic meat products were going to perform. The strategic group analysis also serves as a benchmark for determining the competitive situation on the Danish meat market. Hence, we analyse the market performance of the strategic groups and we describe the competition on the market, in order to identify the optimal market position for the new products. |
