Sensory evaluation and nutritional value of cakes prepared with whole flaxseed flour Ciênc. Tecnol. Aliment.

The objective of this study was to evaluate the nutritional value, the oxidative stabilitiy, and consumer acceptance of cakes containing four different concentrations of flaxseed flour (5, 15, 30 and 45%) as partial replacement for wheat flour. The oxidative stability of polyunsaturated fatty acids was evaluated through the lipid peroxidation test (TBARS) in the flour and cakes. Linolenic acid was determined by gas chromatography as well as contents of protein, lipid, ash, and dietary fiber. Consumer acceptance was assessed using a structured hedonic scale of nine points. AbstractThe Atlantic Forest has species of native fruits, consumed fresh and processed, which have an important contribution to food sovereignty of families that consume it. This study examined the physical and physicochemical characteristics, proximate composition, concentration of carotenoids, vitamin C, vitamin E and minerals in the pulp and kernels of fruits of licuri (Syagrus coronata (Mart.) Becc.). The degermination of corn grains by dry milling generates 5% of a fibrous residue. After segregation and micronization, corn bran becomes a potential source of dietary fiber consumption. However, its effect on iron bioavailability has not been reported in the literature. The objective of the present study was to determine the nutritional composition of corn bran and its effects on iron bioavailability using the hemoglobin depletion-repletion method in rats. The animals were divided into two groups: cellulose (control) and corn bran (experimental). Iron bioavailability was evaluated in three mixtures of cereals, seeds, and grains ("Human Ration"): light, regular, and homemade provided to rats. The animals received an iron depletion diet for 21 days, followed by a repletion diet containing 12 mg·kg-1 of iron for 14 days. The hemoglobin regeneration efficiency and the relative biological value did not differ between the light mixture and control group. The soybean is a protein source of high biological value. However, the presence of anti-nutritional factors affects its protein quality and limits the bioavailability of other nutrients. The effect of heat-treatment, 150 ºC for 30 minutes, on hulled and hull-less soybean flour from the cultivar UFVTN 105AP on urease, trypsin inhibitor activity, protein solubility, amino acid profile, and in vivo protein quality was investigated. The treatment reduced the trypsin inhibitor activity and urease, but it did not affect protein solubility. Objetivou-se caracterizar as propriedades físico-químicas e a correlação entre a textura instrumental e a aceitação sensorial de massas de pizza fortificadas com farinha integral de soja. Foram desenvolvidas formulações contendo 0%, 30%, 50% e 70% de farinha integral de soja. A análise de textura indicou que a adição de 50% de soja elevou (P<0,05) a dureza, gomosidade, elasticidade e mastigabilidade da massa de pizza. Os teores de proteína, fibra alimentar e dos minerais cálcio, zinco, magnésio, potássio, cobre e fósforo foram maiores (P<0,05) com o aumento da concentração da farinha de soja. O objetivo deste trabalho foi determinar a composição química, estimar o conteúdo de compostos fenólicos solúveis totais e de fitatos, e avaliar a capacidade antioxidante de grãos integrais de gergelim (Sesamum indicum) creme e preto. Amostras de ambos os tipos de grão foram submetidas a tratamento térmico em estufa de circulação de ar a 150ºC por 10 min e trituradas até granulometria de 20 mesh. O gergelim creme apresentou maior teor de lipídios, carboidratos, fibra alimentar solúvel e valor calórico, enquanto o gergelim preto apresentou maior teor de fibras alimentares insolúvel e total.
