Segmentation of Retail Food Store Formats in Qingdao, China 31

This study empirically estimates a multivariate binary choice model for four categories of food shopping store formats. The results indicate that in the Qingdao market, traditional counter parts such as wet markets and small grocery stores have been dominated by supermarkets and hypermarkets. At the same time, the rapid growth of hypermarkets in Qingdao is significantly challenging current supermarkets in this city, but they do not compete extensively with wet markets and small grocery stores. Further development of various categories of the food shopping store format is linked to store owned characteristics, potential interrelations among existing retail formats, as well as consumers’' demographics and shopping habits.

Wine is a product whose value largely depends on the reputation associated with its region of production. China is a newcomer and latecomer to wine production and consumption. Wine consumption, especially imported wine, rarely exists outside of major urban areas. Therefore, understanding the Chinese local markets and consumer preference for wine products is important for foreign wine producers. Bovine spongiform encephalopathy in Japan: consumers’ food safety perceptions and willingness to pay for tested beef 31

The discovery of bovine spongiform encephalopathy (BSE), commonly known as ‘mad cow disease’, in Japan caused anxiety about consuming beef and beef products. As a result, there was a sudden fall in sales of beef that hurt the Japanese beef industry as well as major beef exporters to Japan. We analyse factors that affect Japanese consumers’ willingness to pay (WTP) price premiums for BSE-tested beef and estimate the mean WTP for BSE-tested beef using data obtained from a consumer survey in Japan. The Value of Good Neighbors: A Spatial Analysis of the California and Washington Wine Industries 31

The fact that wineries tend to cluster in certain sub-regions can be partially explained by the terroir of those areas. However, a gap in our understanding of the spatial relationships among wineries remains. In this article, winery-level data with geographic information system (GIS) coordinates are utilized to examine the spatial relationships among neighboring wineries. Spatial effects for the California and Washington wine industries are assessed by performing clustering tests based on wine prices and tasting scores. Demand for healthy, safe and environmentally friendly food products has been increasing. In response, producers are marketing organic and other quality-differentiated foods, sometimes claiming to have followed sound environmental and animal welfare practices. These products frequently have unobservable quality attributes. If the profit-maximizing producer is able to deceive the consumer with a false claim, then he or she will enjoy a higher price with lower production costs (compared to the full disclosure outcomes). Quantity surcharges exist when unit prices are higher for larger packages. We hypothesize that various sizes of goods are differentiated products, and this explains some surcharges. Estimating a random-coefficients logit demand model, we examine own and cross elasticities to determine the level of differentiation between products with different size packages.

PATRON DEMAND DEPOSIT ACCOUNT AND REGIONAL PATRONAGE FINANCING ACTIVITIES OF AGRIBUSINESS COOPERATIVES 31

This study investigates agribusiness cooperatives' reliance on patron demand deposit accounts (PDDAs) and regional patronage as sources of capital. Approximately 13% of cooperatives surveyed carry PDDAs, typically fruit cooperatives, of which over one-half have no financial protection against large unexpected withdrawals. Cooperatives with PDDAs must be concerned with potential legal conflicts regarding the handling of these accounts, as evidenced by a U.S. Supreme Court case classifying PDDAs as securities. Supply cooperatives are most likely to show investment in other cooperatives as a high percentage of total assets, which could generate insolvency issues for locals.

World-wide consumer response toward food products made from genetically modified ingredients has been largely negative. However, the majority of the previous studies on consumer attitudes towards genetically modified food products were conducted in developed countries in Europe as well as Japan. The small number of studies conducted in developing countries obtained different results from the developed world. This paper considers the motivations for consumer attitudes towards genetically modified foods in developing countries. CONSUMER ATTITUDES TOWARDS GENETICALLY MODIFIED FOODS IN NORWAY 31

There is a lack of public acceptance of genetically modified (GM) food products in Europe. Using a dichotomous choice contingent valuation methodology, we find that willingness to accept (WTA) for GM food in Norway is positively affected (i.e. a greater discount is required) by higher levels of self-reported risk perceptions toward GM-food and preferences for domestically produced food. The estimation results show that self-reported knowledge about biotechnology increases WTA while higher levels of formal education decrease the WTA for GM-foods. We assess consumer choice of eco-labeled, organic, and regular apples, and identify sociodemographic characteristics affecting the choice among those three alternatives. Eco-labeled apples are less desirable than organic when food safety, the environment, and children's needs are considered. Characteristics that may be expected to positively affect the decision to buy eco-labeled apples relative to regular apples actually have the opposite effect with the inclusion of the organic alternative. When considering all three choices, the eco-labeled product is found to be an intermediate choice among consumers.

SEASONAL OLIGOPOLY POWER IN THE D'ANJOU PEAR INDUSTRY 31

We estimate seasonal oligopoly power at a disaggregated variety level in the D'Anjou pear market. Our data spans 1993 to 2000, during which time imported pears became more prevalent in the U.S. market. The range of monthly industry-conduct-parameter magnitudes is 0.034 to 0.195 and is most pronounced when the fresh D'Anjou pear crop first becomes available in the earliest months of the marketing year. Possible reasons for timing of oligopoly power relate to the growth of imported pears during the latter portion of marketing year. In addition, oligopoly power may diminish during the marketing year as pears in storage decline in quality.

This paper develops cost effective investment rules for farm worker housing and applies the model to farm worker housing in the state of Washington. The state must meet varying seasonal farm worker housing needs at minimum expense. In this study we examine investment rules to choose among different housing technologies in order to minimize the total costs of housing consistent with achieving welfare goals. The research extends existing peak-load models to the multi-season planning cycle case and applies the approach empirically to a new subject area.

FEDERAL GRAZING REFORM AND AVOIDABLE RISK 31

Recent rangeland reform attempts have increased ranchers'’ uncertainty of retaining grazing permits on federal land. This uncertainty is analyzed with a model of grazing on federal land. Ranchers facing this uncertainty will behave differently than if they were guaranteed the renewal of grazing permits at constant real grazing fees. It is shown that the socially optimal outcome may be achieved by adding avoidable risk through targeted rangeland reform. Rangeland reform attempts that create unavoidable risk can make both ranchers and environmental groups worse off.

Functional Foods in the Marketplace: Willingness to Pay for Apples Enriched with Antioxidants 31

The attention on so-called “functional foods” has been growing as consumers become more concerned with diet and nutrition. This article aims to measure consumers’ response to apples with “naturally enriched antioxidant coatings.” Surveys were conducted in grocery stores in Seattle, Washington and Spokane, Washington. The results suggest that consumers have a somewhat positive attitude towards functional foods in general and with apples enriched with antioxidants in particular. A contingent valuation technique was used to assess factors affecting consumers’ willingness to pay for the apples with antioxidant coatings. Consumers' Willingness to Pay for Washington Apples with Respect to Sensory Attributes 31

To evaluate consumers’ willingness to pay (WTP) for Washington apples, the effects of firmness and sweetness as the representative sensory attributes are investigated in addition to those of consumer demographics and preferences. A tasting survey was conducted in Portland, Oregon on two varieties of apples, Gala and Red Delicious. Survey data is analyzed by employing a dichotomous-choice contingent valuation method, the double-bounded model, and maximum likelihood estimates are obtained. This study shows that firmer and sweeter apples induce more WTP. Age is also an important factor affecting WTP for apples. The dietary changes in China to include more meat, dairy, and processed foods, are commonly attributed in literature to income increases, urbanization, and the availability of western food products. As seen in other Asian countries, these new food habits may increase obesity, diabetes, and other degenerative diseases among the Chinese people. These new health concerns will likely have economic consequences in terms of productivity losses and increased health care costs.
