Is Embedding Entailed in Consumer Valuation of Food Safety Characteristics? 31

Consumers’ preferences for food safety characteristics are investigated with particular focus on existence of an embedding effect. Embedding exists if consumer valuation of food safety is insensitive to scope. Two choice experiments have been conducted valuing food safety in respectively minced pork and chicken breasts, exemplified by avoiding human risks of Salmonella infections and strengthening the restrictions of using antibiotics in the pork production and in terms of avoiding human risks of Salmonella and Campylobacter infections respectively. The results showed no indications of an embedding effect between the food safety characteristics, in neither of the cases.

Ways of increasing the market for local produce beyond the local residents within the local community, could include the following two potential solutions: 1) an expansion out to a more national/global market, which though would be costly in terms of transportation costs or 2) getting national/global consumers into the local market, e.g. as tourists. How to increase the effectiveness of agri-environmental subsidy schemes through knowledge of farmer perceptions-a choice experiment on pesticide free buffer zones 31

Danish farmers have been far less interested in agri-environmental subsidy schemes than anticipated. We use choice experiments to estimate 486 Danish farmers’ preferences for a number of policy relevant scheme-characteristics. Subsidy schemes for pesticide free buffer zones along hedgerows are used as a case and analysed using a random parameter logit framework. By quantifying farmers’ preferences in monetary values, we are able to assess the relative importance of individual scheme-characteristics. Farmer’s assessments of the administrative burden are captured by estimating how they value free-of-charge assistance for the application procedure. Consumers, the public authorities, and the food industry are all concerned with the safety of meat. The increasing demand for safer food from the consumers and the public authorities puts pressure on producers to identify efficient methods to reduce risks.
