Are nutritional claims an adequate tool for public health? Evidence from food purchases in France AgEcon

Nutritional claims have become a major instrument for providing consumers with information at the point of purchase, enabling them to make nutritionally appropriate choices. This paper deals with two public policy issues linked to the implementation of nutritional claims, i.e. efficiency and equity, in terms of nutritional outcomes and in terms of population targeting. We consider the French breakfast foods market at the household level using 2004 TNS Worldpanel data. We estimate a demand system taking into account the selection issue. For this we use the Shonkwiler and Yen’s procedure which, unlike Heckman’s, allows participation on every market of products to be controlled for. The Effects of a "Fat Tax" on the Nutrient Intake of French Households AgEcon

This article assesses the effects of a "fat tax" on the nutrient intake of French households across different income groups using a method that estimates the nutrient elasticities of French households. We estimate a complete demand system by aggregating an individual demand system over cohorts. The use of a cohort model is justified by the incompleteness of our data. We find that a "fat tax" would have ambiguous and extremely small effects on the nutrient intake of French households, and its associated economic welfare costs would be similarly weak.

Organic Food Consumption Patterns in France AgEcon

This research addresses two important issues for the future expansion of organic consumption in France. The first one is related to knowing whether the organic choice is a permanent feature of consumer’s attitude or not: Do organic buyers occasionally pick one organic product or do they choose organic for “several” categories? The second issue concerns the impact of prices on buying organics which is revisited, distinguishing between capturing new consumers and increasing the demand coming from people already involved in organic markets. Public Policy and Diet Quality: Impact of Prices on Nutrient Adequacy using French Expenditure Data from 1996 to 2005 AgEcon

This paper aims at simulating optimal prices satisfying public health recommendations in terms of nutrient adequacy. This implies to estimate a complete food demand system in order to compute price elasticities. Food consumption behaviors are described by an AI functional form [Deaton and Muellbauer(1980)] augmented to control for habit persistence. The demand system is estimated using the Iterated Least Square Estimator developed by Blundell and Robin (1999). We use French household expenditure data drawn from TNS Worldpanel covering 130 periods of 4 weeks from 1996 to 2005. MODELING STRUCTURAL CHANGE IN FRENCH BEEF, POULTRY, AND FISH DEMAND: A MARKOV SWITCHING AIDS MODEL AgEcon

Structural change in the French demand of beef, poultry and fish is originally investigated. Rather than applying the traditional switching AIDS (S-AIDS) model, we reconsider the analysis of structural change through the Markov switching AIDS (MS-AIDS). The main feature of this model is that the switching mechanism is controlled by an unobserved variable that follows a Markov chain. As such, it captures more complex dynamic patterns than does the S-AIDS model. The MS-AIDS and the S-AIDS are compared to determine which model provides the better explanation of beef, poultry, and fish dynamic demand.
