ABSTRACT This study aimed to fit different mathematical models to the experimental data on drying of baru fruits (Dipteryx alata Vogel), determine and assess the effective diffusion coefficient, as well as obtain the activation energy and thermodynamic properties for the drying process under different air temperature conditions. Baru fruits with an initial moisture content of 0.429 ± 0.044 (dry basis, db) were dried in a forced air ventilation oven under four temperature conditions (40, 60, 80, and 100 °C) until reaching a moisture content of 0.065 ± 0.018 (decimal db). ABSTRACT Drying is the most widely used process to ensure the quality and stability of plant products. Therefore, this study aimed to determine the effective water diffusivity and activation energy in grain sorghum during drying at different temperatures and initial moisture contents. Sorghum grains (cultivar DeKalb 640) were harvested with an initial moisture content of 0.49 kg water kg−1 dry matter. ABSTRACT Baru (Dipteryx alata Vogel) is a native tree of the Cerrado. The drying and milling process can be an alternative for the use and conservation of baru fruits. The objective of this study was to evaluate the effect of drying on the nutritional characteristics of the epicarp + mesocarp flour of baru fruits. Propôs-se, neste trabalho, avaliar a qualidade fisiológica das sementes de soja ao longo do armazenamento durante 180 dias em diferentes teores de água e em duas condições de temperatura. Foram utilizadas sementes de soja, cultivar CD 242 RR com teores de água iniciais de 12, 13 e 14% (b.u.). As sementes foram adquiridas com o teor de água de 11,0% (b.u.); em seguida, foram umedecidas em câmara BOD a 20 ºC e 85% de umidade relativa, homogeneizadas e acondicionadas em sacos plásticos de polipropileno; as embalagens foram mantidas em dois ambientes distintos. Objetivou-se, com este trabalho, analisar a qualidade fisiológica das sementes de sorgo sacarino submetidas à secagem em diferentes condições de ar. A secagem do sorgo sacarino foi realizada mantendo-se as temperaturas controladas de 40, 55, 70, 85 e 100 °C e umidades relativas de 28,4; 18,6; 12,2; 7,3 e 3,1%, durante os períodos de 3,0; 1,75; 1,42; 1,08 e 0,83 h, respectivamente. ABSTRACT With the knowledge on the hygroscopic equilibrium of the baru (Dipteryx alata Vogel) fruit, the product can be adequately handled to maintain the moisture content at the levels recommended for safe storage.
