| Introdução A produção de frangos de corte representa grande importância para a economia brasileira, sendo um potente gerador de emprego e renda. Nos últimos anos, tem apresentado avanços no aspecto produtivo, parte destes associados ao melhoramento genético e ao avanço do conhecimento nas áreas de manejo, de alimentação e de nutrição (ALBINO et al., 2007). | The objective of this study was to analyze the profile of milk consumers in the city of Maringá, PR and identify the determinants in the choice of food products. Semistructured forms were used, containing sociodemographic questions and about the consumption behavior of 328 milk consumers in the municipality of Maringá, PR. Data were tabulated and analyzed using descriptive statistics. Sociodemographic variables were confronted with determinants of purchase. The majority of the sample interviewed (60.50%) were female, with a mean age above 31 years, with higher education and income of 5.88 minimum monthly salaries. | The study was conducted in 32 dairy production systems (DPS) located in the city of Toledo-Paraná, and aimed at verifying the practices of hygiene applied during milking, as well as, observing their correlation with the total bacterial count (TBC), the somatic cell count (SCC) and the milk composition. We obtained 24 milk analyses in two years of collecting for each DPS. Along with the milk analysis, we collected some information from DPS by conducting a questionnaire where data were obtained, regarding to the practices of hygiene during milking.
