In Mexico beef cattle production under double purpose systems is the main economic activity in rural areas. This activity has been developed for decades in the south of México State, without any technical assistance. The productive chain of beef production has a weak links between the different bonds (producers, slaughter houses, traders etc.), which in general have been working independently. Organization between the bonds of the chain will increase the competitiveness of the system. The present study analyzes the productive structure and the yield of the companies extractors of derivatives of the mexican lime (Citrus aurantifolia Swingle) in Mexico, by means of the generation of quantitative indicators. The margins of commercialization of different products elaborated by the industry calculated; also they were studied the enterprises profitability. The study is referred to the analysis of 12 industries by-product processors derived from mexican lime, three located in the State of Colima, five in Michoacán, three in Oaxaca and one in the State of Guerrero. The objective was to determinate the productivity and profitability of quail production in the south of México State, on temperate conditions. The methodology used was formulation and evaluation of projects. The product's main market was Toluca, Temascaltepec and Valle de Bravo, with a monthly demand of 5,000, 2,800 and 1,900 carcasses respectively. Project evaluation allows to resources optimisation, improving business's productivity and viable investments. The aim of this research was to provide technical and economic elements, to support decisions about the feasibility or not to run an agribusiness oriented to fertilizer's formulas production, used for potato and maize crops during establishment and maintenance in Toluca Valley, Estate of Mexico.
