Research and development of snack bar from various brown rice varieties at Phatthalung Rice Research Center during 2011 – 2012 showed that mixing of roasted individual brown rice 100 grams with the 40 grams of white sugar produced better appearance and acceptable product compared with 40 grams honey bee. Nutritional analysis of roasted 100 grams brown rice showed the highest protein contents was highest in black glutinous brown rice (8.6 percent), followed by Sangyod Phatthalung brown rice. However, the highest fat and potassium contents were found in roasted Sangyod Phatthalung brown rice at 4.0 grams and 1120 milligrams, respectively. Purification and improvement of local non-glutinous rice is a sub-project under the Rainfed Lowland Rice Breeding in Southern Region aim s to improve local rice varieties with high yielding potential and specific good grain qualities for niche markets. The experiment s were conducted by using randomized complete block design with four replications. Inter-station yield trials were located in Phatthalung, Nakhon Si Thammarat, Pattani and Krabi rice research centers during 2010-2012. Regional yield trials were experimented in Phatthalung, Nakhon Si Thammarat and Songkla during 2011-2012 wet season. Pattani Rice Research center is the main center of Rice Department for developing the rice seeds in 5 special provinces of the southern parts based on southern rice seed research project. The study that aimed to investigate areas and need of rice seeds of farmers found that 75 % of local rice seeds were needed by farmers. Two most desirable rice seeds delete in the southern parts that studied by Pattani Rice Research Center Were Seebukabntang Rice Seed (PTNC09001) and Hawm Kradang-Ngah Rice seed (PTNC09002-59). Development of local rice variety at Krabi Rice Research Center is an experiment under local upland rice breeding program in the southern region for compensating rubber trees and oil palms. One hundred and twenty rice varieties that farmers grow in the southern region were selected to study since 2008 until now. The aims of this study are to record the characteristics, categorize, investigate, select pure rice seed, compare production and test on using nitrogen fertilizer. The result showed that this variety, Dokkha, is photoperiod sensitive.
