Physico-chemical, biological and functional properties of proteins extracted from organic rice bran with different methods were determined. Rice bran protein (RBP) obtained from enzymatic (phytase-xylanase) extraction showed the lowest color difference (ΔE, P<0.05). Bulk density of RBP was ranged between 0.71-0.73 g/ml (P>0.05). Total soluble solid and pH of RBP obtained from different extraction methods were not significantly different (P>0.05). Sonication method provided the extract with the highest total phenolic content (3.01 mg tannic acid/g RBP), DPPH radical scavenging activity (62.29%), and ferric reducing activity power (FRAP 2.00 mM).
