Schwefelgehalte, Proteinfraktionen und Kleberzugfestigkeit von Weizen – Ergebnisse eines Ringversuchs biologisch-dynamischer Züchter Organic Eprints

Schwefelmangel führt bei Weizen zu erheblich festeren Teigen. Daher kollidierte in den 80er Jahren unvorhergesehen das Zuchtziel einer Steigerung der Backqualität durch eine Straffung der Proteinstruktur mit einer exogen bewirkten zusätzlichen Verfestigung der Proteinmatrix infolge drastisch reduzierter Schwefeleinträge in die Ökosysteme. Eine S-Düngung führte dann auch zu einer Steigerung des Backvolumens. Und zwar nicht weil die Kleber der modernen Weizensorten zu weich, sondern weil sie durch die Züchtung bereits zu stark verfestigt waren und den neuen Umweltverhältnissen nicht mehr angepasst waren. Contribution of organic farming to conserving and improving biodiversity in Germany – the example avi-fauna Organic Eprints

Although it is the aim of organic farming to increase biodiversity, there is little knowledge about the impact of organic farming on birds. From 2001 to 2003, the number of breeding birds was recorded annually on the organic experimental farm of the Institute of Organic Farming (600 ha), and on adjacent conventional and organic farms (60 ha and 40 ha) in Northern Germany. The number of skylark (Alauda arvensis) territories increased considerably after the conversion from conventional to organic farming on the premises of the Institute. Eine kritische Analyse von Ruschs Theorien zur Bodenfruchtbarkeit als Grundlage für die Bodenbewirtschaftung im Ökologischen Landbau Organic Eprints

Auf die in den 50er und 60er Jahren publizierten Theorien zur Bodenfruchtbarkeit von Hans Peter Rusch wird im organisch-biologischen Landbau heute noch Bezug genommen. Zu nennen sind hier der Rusch-Test zur Einstufung der biologischen Qualität der organischen Substanz und von Böden, die Systematisierung des Abbaus organischer Substanz im Boden und der Humusbildung sowie die Flächenkompostierung. Ruschs Lehren zielen auf eine Verbesserung der Bodengare durch effiziente Zufuhr organischer Substanz und Humusbildung sowie auf die Verbesserung der Ausnutzung von Nährstoffen. Conventional agriculture is associated with problems such as pesticide residues in soils and plants, contamination of meat with antibiotics and hormones, and eutrophication of water bodies. An alternative for consumers is the consumption of products from organic farming. Organic management is possible on arable farms, although livestock is often a crucial part of the system as manure and slurry can contribute significantly to maintaining closed nutrient cycles. Independent of the management system, it is not possible to exclude nutrient losses to the environment on agricultural fields, but acceptable loads need to be defined. Assessment of product quality is of special significance in organic farming and includes the supervision of crop quality in different growing systems and the characterisation of different cultivars. Manure samples from 194 farms with organic livestock production were analysed for their macro- and micronutrient contents. Guidance values for N, P, K, Mg and S concen¬trations given for conventional systems are within the range of values ¬determined here for organic farms. However, they can only be used for first estimations in fertilization planning, since – as demonstrated by the presented data – nutrient contents may vary over a wide range. This was also the case for the micronutrient concentrations (B, Cu, Zn, Mn, Mo and Se).
