Økologiske kyllinger fylder under 1% af kyllingesalget, og samtidig er kyllinger en af de varegrupper, hvor det økologiske markedsandel er lavest. Den gennemsnitlige økologiske markedsandel er eksempelvis på 7%, og for enkelte varegruppers vedkommende er den mere end 25% (æg og mælk). Derudover er aspekter som dyrevelfærd, bæredygtighed og smag, hvor den økologiske kyllingeproduktion kan adskille sig markant fra den konventionelle produktion, vigtige elementer i forbrugernes valg af dagligvarer, og der synes såle-des at være et stort potentiale for at udvide markedsandelen af økologiske kyllinger. The Danish food system has undergone a transition in the past 10-20 years, in which new quality conventions have evolved. Examples include, increasing organic production and consumption, increasing interest in local food, experience, community, taste and gastronomy. Value is a key concept for understanding how organic food networks function because values are the foundation of the organic production practice, thus value must be given a significant role in assessing and balancing the effects of organic food networks. Alternative Food Networks (AFN) is often mentioned as a way to reconfigure the link between producers and consumers and build trust in the food system. This article explores the function, configuration and generation of trust in AFNs. The structure is twofold. First we discuss the theoretical underpinnings of trust, in both recent AFN literature and in sociology, and develop a conceptual framework for analyzing trust in AFN. Developing a model to characterize the influence of the market on organic production has long been sought within agro-food studies. This paper explores how the market influences organic production by looking at the relationship between the market and producers’ engagement in trust and quality building as well as farm level production strategy in the Danish organic food market. Trust and knowledge are two concepts that are considered important for understanding consumers’ engagement with organic products, but the concepts are often used at random. This article explores the configuration and generation of consumer trust in organics and investigates the relationship between knowledge and trust. The article is based on a multi-method study of Danish consumers’ perceptions of organics that included a consumer survey, a focus group, and individual interviews. Research in organic cropping systems has identified basic principles for increasing the robustness and production level of organic arable systems. But even though farmers know these principles, they have not implemented them in practice. This paper aims to improve our understanding of this “knowledge gap” using the theory of knowledge asymmetries, and discusses the implications for research, extension and practice. The paper is based on interviews with 10 organic arable farms focused on how to understand the barriers from the perspective and context of the farming system.
