Качеството на храните е категория която се развива непрекъснато. В настоящия доклад са обобщени и анализирани концепциите за качество на биологичните храни в литературата, като е използван дескриптивно-аналитичен метод. Разгледаните концепции се основават на субективните оценки, които играят важна роля в предпочитанията на потребителите. На практика, потребителите оценяват качеството главно чрез своите възприятия, които са филтрирани и претеглени чрез скалата на предпочитанията, водещи след това до избора на продукт. Консуматорите оценяват качеството на биологичните храни и го смятат за по-високо, спрямо това на обикновените продукти. |

The quality and safety of organic products has been the subject of lively debate in the scientific community in recent years. The growing demand for organic food is based primarily on consumers’ concerns about the quality and safety and the perception that organic foods are healthier and safer than conventional foods. This paper identifies and makes analyses of comparative research studies on the quality of organic and conventional foods conducted over the last fifteen years. Based on the food quality science fundamentals a conceptual model for comparative testing of product quality is proposed.
