Interest in the influence of trust on consumers’ responses to food risk perceptions associated with Canadian instances of BSE motivates this study, in which Canadian households’ expenditures on fresh meat are assessed in the context of the first three recurring risk events in which bovine spongiform encephalopathy (BSE) was found to have affected Canadian cows. This study investigates evidence of non-compensatory preferences by incorporating attribute cutoffs into the modeling of consumer choices in the context of food with health-related attributes (omega-3 content) that may be associated with fortification or may result from genetic modification (GM). A Survey of Literature on Genetically Modified Crops: Economics, Ethics and Society AgEcon

This paper reports on a review of literature in the form of academic papers and published research on ethical and consumer issues for GM crops in North America, with particular emphasis on GM wheat. The issues raised in these papers and the findings and arguments posed by the authors are outlined. A general conclusion that can be drawn from this overview is that public attitudes toward GM foods are diverse and sometimes quite strongly held. The strong negative views of GM food held by some appear to be mainly grounded in individuals’ ethical or moral values. We assess Canadian’s risk perceptions for genetically modified (GM) food and probe influences of socio-economic, demographic and other factors impinging on these perceptions. An internet-administered questionnaire with two stated choice split-sample experiments that approximate market choices of individual grocery shoppers is applied to elicit purchase behavior from 882 respondents across Canada. This study focuses on the demand for meat and the market vulnerabilities that apply to four selected Asian markets that are of potential importance to meat exporters. The markets identified for this purpose are Japan, South Korea, Indonesia, and Singapore. An initial overview of market prospects and vulnerabilities based on previous studies is reported. Multi-attribute modeling has rapidly progressed from being a novelty to becoming a widely used tool of economic research. When both choice and attribute ratings data are available, a model that makes joint use of both offers informative inference opportunities. In the present study we develop a joint model which utilizes both choice and ratings data, allows for scale usage heterogeneity, is robust to violations of utility continuity and completeness. The model is used to obtain WTP estimates for genetically-modified content and country-of-origin attributes in an survey-based study of Canola oil labeling. Consumers' attitudes to genetically modified (GM) food ingredients and their reactions to and preferences for labeling of GM food are topical issues for Canadian food policy and are the subjects of this study. This project included several components. The first of these was an assessment of public attitudes to biotechnology and to GM food based on evidence from polls and other studies. Labelling Policy for GM Foods: Pragmatism in Action or Policy Failure? AgEcon

Public wariness of genetically modified (GM) foods has led many nations to develop labelling policies for foods derived from modern agricultural biotechnology. In most cases mandatory labelling has been specified. In contrast, voluntary labelling is the chosen policy approach for the United States and Canada. Detailed regulations to enable a voluntary labelling policy to become effective in Canada have been time-consuming to develop. An even longer period of time has applied in the case of unsuccessful efforts to develop consensus standards for GM food labelling at the international level, through the processes of Codex Alimentarius.

Japan imports 6.3 MMT of wheat annually and consumes almost 35 percent of this in the form of noodles. The purpose of this paper is to report on a study that evaluates the preferences of Japanese millers for the various characteristics of wheat and flour that are used in noodle making in Japan. The study used stated preference methodologies (SPM), that were developed and pre-tested through initial interviews with Japanese flour millers. In total, 57 purchase and quality managers for 22 Japanese milling companies were surveyed by means of direct interviews and 41 respondents completed the full SPM survey. Consumers' Responses to the Potential Use of Bovine Somatotrophin in Canadian Dairy Production AgEcon

The responses of a random sample of consumers to the use of bovine somatotrophin (BST) in milk production were elicited using a stated preference methodology. A multinomial logit model of consumer choice was developed and tested to analyse consumers' choices of milk with varying characteristics of fat content, price, freshness and BST treatment. Welfare calculations for a representative consumer indicate welfare losses with the introduction of BST which are not fully offset by preferred milk attributes such as reduced price or increased freshness levels. Welfare losses were slightly less for a male than a female consumer and were less for consumers with higher levels of income and education. The Future of Canadian Wheat Exports to Japan: Comparing the Japanese and South Korean Noodle Flour Markets AgEcon

While the demand for wheat flour for bread is relatively static in both Japan and South Korea, consumer markets for noodles in both countries are growing in importance. Each of the two countries depends heavily on milling-wheat imports since there is very little domestic wheat production. Canadian wheat exports represent only a small share of South Korean wheat imports and about 25 percent of the wheat imported by Japan. The South Korean wheat import market was deregulated in 1990. The liberalization of wheat imports and deregulation of the Korean milling sector have intensified competition in the flour milling industries in that market.
