Dansk undersøgelse om forbrug af øko-varer Organic Eprints

Efterspørgslen efter økologiske fødevarer er vokset kraftigt i Danmark og mange andre vestlige lande de seneste ti år. Forbruget udgør dog stadig kun få procent af det samlede fødevareforbrug i de fleste lande. I dag er det en nicheproduktion, men den har måske potentialet til at sprænge alle rammer og opnå betragtelige markedsandele. I et nyligt afsluttet projekt “Efterspørgslen efter økologiske fødevarer” er det analyseret hvilke faktorer, der kan styrke en sådan udvikling. Projektet er udført af AKF og DMU i regi af Forskningscenter for Økologisk Jordbrug.

Consumer demand for orgnic foods : Attitudes, values and purchasing behaviour Organic Eprints

The Danish market for organic foods is relatively mature, meaning that it does not suffer seriously from the supply shortages and barriers, which dominate most of the markets outside Denmark. The well-functioning Danish market makes it possible to collect and analyse reliable data on purchases. In an ongoing study we analyse consumer demand for organic foods in Denmark. The project is part of the Danish DARCOF centre and participating institutions include AKF, University of Copenhagen, GfK Denmark and CIRED, France. The character of demand in mature organic food markets: Great Britain and Denmark compared Organic Eprints

We investigate the organic food market in two selected European countries, Great Britain and Denmark, identifying main differences and similarities. We focus particularly on consumer preferences and priorities, labelling schemes, supply and sales channels, as a basis for assessing market stability and prospects for future growth. We employ a unique set of household panel data that includes information on stated values and concerns, as well as registered purchasing behaviour. In this paper, we use a unique combination of questionnaire data and real market purchase data on organic food to examine whether stated values can predict purchase behaviour. We are particularly concerned about revealing to which extent organic goods represent private or public benefits, because this has important implications for the need for public intervention. Dette papir gengiver hovedresultaterne fra et studie, der estimerer en model for fordelingen af forbruget af fødevarer på den del, der er økologisk, og den del, der er konventionelt fremstillet. Modellen er udformet, så den kan anvendes i sammenhæng med makroøkonomiske modeller, først og fremmest med AAGE (Agricultural Applied General Equilibrium) modellens efterspørgselssystem. Integreres disse to modeller, forbedres grundlaget for at foretage beregninger af de samfundsøkonomiske konsekvenser af øget omlægning af landbruget til økologisk drift.

Willingness to Pay for Organic Foods: A Comparison between Survey Data and Panel Data from Denmark Organic Eprints

We present a project aiming at estimating the willingness to pay for organic foods through panel data and a survey. The panel data is based on weekly reporting of household purchases by 2000 Danish households with information on their demographic and socio-economic characteristics. Detailed information on organic foods exist from 1997. A questionnaire asking consumers to distinguish and rank various food attributes will be sent out to all households in the sample in June 2002. Using unique household panel purchase data together with information on stated concern, values and attitudes, we find that the Danish and British markets share several important features. In both countries, most organic food is produced, processed and distributed at a concentrated and industrialised market, where consumer confidence is sustained by well-working organic labelling. Modeling demand for organic foods Organic Eprints

The market of organic foods has experienced tremendous growth during the period 1997-1998. Highest growth is experienced at the bread/cereal group where the volume share has increased by 143% during the whole period. During this period, relative organic prices have decreased, except for meat. Organic volume shares are highest for dairy products (10%), which is more than twice the share for bread/cereals (5%) and other foods (4%), which covers fruit and vegetables. In the bottom is the share of organic meat (1%). The model estimates price and budget elasticities. Designing and Testing the Questionnaire – Results and Considerations Organic Eprints

Abstract: In this working paper, we document the procedure and results from the test version of the questionnaire. The questionnaire is designed to provide information for model estimation, in addition to panel data. The questionnaire was first discussed with various researchers inside and outside the project, then tested in focus group interviews. Ultimately, it was mailed to 400 randomly chosen households. Elaborating on results from test sample gave rise to re-assessment of the questionnaire, resulting in a new version. All changes are documented in this working paper. In addition, the working paper highlights main results on behaviour and attitudes of the test sample.
