Bei der qualitativen Beurteilung von biologisch erzeugten Lebensmitteln sind sowohl die Produktionsweise als auch die Beschaffenheit der Produkte selbst relevant. Es ist heute weitgehend unbestritten, dass die biologische Lebensmittelproduktion ökologischer, ressourcenschonender, ethischer ist. Es mehren sich aber auch die Hinweise darauf, dass Bio-Lebensmittel aus biologischer Landwirtschaft mit sorgfältiger Weiterverarbeitung ernährungsphysiologisch und sensorisch bessere Qualitäten aufweisen und damit sehr wertvoll für die menschliche Ernährung sind. • Eine gesundheitsfördernde Ernährung braucht sowohl eine bedarfsgerechte Zusammenstellung als auch beste Rohstoffqualität. A third of the ecological footprint and a fifth of all greenhouse gas emissions are food-related. The Austrian province of Niederösterreich (NÖ, Lower Austria) has enshrined climate protection in its constitution. For the NÖ Landhausküche, which provides daily meals to 1500 public employees, we conceived and implemented the so called "climate change focus": after conducting staff trainings, switching to regional ecological food suppliers, and optimising recipes, the percentage of ecological components has risen to 65% (even to 100% for meat, poultry, potatoes and seasonal vegetables). The consumption of fruits and vegetables contributes greatly to the preservation of health. However, less than 20% of the Austrian children consume the recommended quantity of f&v, school pupils consume only between 1/4th and 1/3rd of the recommended quantity. A main cause is the lack of availability. The "organic school fruit scheme" as part of the project "Wiener Jause" (Viennese snack), which we conceived and implemented, aims to rectify this situation for the public primary schools in the 20th district of Vienna using a situational preventive approach.
