Dietary patterns have manifold impacts on human health and the environment. Impact assessments are employed to compare impacts of single food items or of diets as a whole, either in their current state or for theoretical scenarios. However, conclusions from impact assessments focusing on theoretical scenarios are diverse, and occasionally even contradicting. The role of animals and types of production are key aspects of these discussions. Therefore, the aim of this study is to analyse the methodological choices that cause these differing conclusions. While the role of livestock in sustainable food systems is heavily debated, recent studies show that livestock can contribute to global nutrition security by converting leftover streams – products humans cannot or do not want to eat - into animal-source food (ASF). Where these studies clearly underpin livestock’s role in global food security, the current study aims to identify which combination of livestock systems, differing in production level, can optimally convert leftover streams into protein. The expansion of livestock production throughout the world has led to increased demand for high protein animal feed. This expansion has created economic benefits for livestock farmers and other actors in the chain, but also resulted in environmental and social side effects. This study aims to identify a set of sustainability issues that cover the environmental, economic and social dimensions of soymeal and beef production chains. Background Dietary patterns have manifold impacts on the environment. • However, studies that assess dietary patterns operate with varying methodological approaches and underlying assumptions, which evoke different, and occasionally even contradicting, results. • This leads to uncertainty regarding what should or should not be eaten, especially with regard to animal-source food (ASF) and production types (e.g. conventional or organic). • Therefore, to adequately interpret results, it is necessary to interpret these in the context of the respective methods used and assumptions made.

Defining a land boundary for sustainable livestock consumption Organic Eprints

The need for more sustainable production and consumption of animal source food (ASF) is central to the achievement of the sustainable development goals: within this context, wise use of land is a core challenge and concern. A key question in feeding the future world is: how much ASF should we eat? We demonstrate that livestock raised under the circular economy concept could provide a significant, nonnegligible part (9–23 g/per capita) of our daily protein needs (~50–60 g/per capita). This livestock then would not consume human‐edible biomass, such as grains, but mainly convert leftovers from arable land and grass resources into valuable food, implying that production of livestock feed is largely decoupled from arable land. Environmental assessment tools for the evaluation and improvement of European livestock production systems Organic Eprints

Different types of assessment tools have been developed in Europe with the purpose of determining the environmental impact of various livestock production systems at farm level. The assessment tools differ in terms of which environmental objectives are included and how indicators are constructed and interpreted. The paper compares typical tools for environmental assessment of livestock production systems, and recommends selected indicators suitable for benchmarking. The assessment tools used very different types of indicators ranging from descriptions of farm management and quantification of input to estimates of emissions of, e.g., nitrate and ammonia.
