O sorgo é um alimento funcional e sem glúten, por isso, está se tornando um ingrediente potencial para dietas celíacas. O objetivo deste estudo foi avaliar propriedades físico-químicas e a aceitabilidade de bolo de chocolate dietético sem glúten, à base de farinha de sorgo. O teste sensorial foi realizado com 120 provadores, os quais provaram também duas formulações de bolo idênticas, substituindo apenas a farinha de sorgo por farinha integral de trigo e de arroz. O bolo à base de sorgo foi significativamente preferido em relação ao de trigo em vários atributos e igualmente aceito em relação ao produto de arroz, com exceção da aparência do bolo de sorgo, que foi considerada melhor. The intensification of beef cattle production systems has been adopted for many farmers in Brazil, specially in Midwest region, as a way to increase the productivity by unit of land used as well as to increase the profit and decrease the Greenhouse Gas (GHG) emissions.
