Nejprve popisuje požadavky a postup při posklizňové úpravě produktů a to především u zrnin a okopanin. V další části se potom věnuje podmínkám a zásadám pro jejich skladování. Pozornost je věnována zásadám, které je nutné dodržovat při zpracování bioproduktů a při jejich přepravě. Monografie zahrnuje zásady i příklady omezení, které platí při produkci biopotravin na bázi rostlinných surovin obecně či při zpracování přímo na farmě. |

| Stěžejní legislativní normy Nařízení Rady (EC) No. 834/2007 a nařízení komise (EC) No. 889/2008 udávají podmínky použití osiva v ekologickém zemědělství. Povoleno je až na výjimky pouze použití ekologicky certifikovaného osiva pro zakládání porostů. Osivo proto musí pocházet z matečních rostlin, které byly po jedno vegetační období pěstovány v systému ekologického zemědělství. Problémem je ale vysoká náročnost množení osiv v ekologickém zemědělství, protože množitelský porost musí splnit podmínky pro uznávací řízení stejné jako konvenční porost, ale bez podpůrných prostředků konvenčního zemědělství (agrochemikálie). | Organic methods growing bread wheat may have negative effects on the technological value, especially in the case of the crucial crude protein content. The aim of paper is to identify diferences in quality of 8 varieties recomended in conventional or organic conditions in Austria and 2 strains. Obvious effect of year on the quality, set up in statistics, was confirmed for qualitative parametres. The correlation analysis also provides similar figures. Effect of the year in a negative correlation to crude protein content (r=-0,66), whereas in a positive correlation to starch content (r=0,78) and falling number (r=0,86). | Emmer wheat (Triticum diccocum Schrank) belonged to the most frequent species of cereals in the past. Nowadays, it is grown in arid and montane areas in particular. Interest in this cereal species has increased, as it is tolerant to biotic and abiotic stressing factors. Therefore, yield parameters were evaluated in three-year (2007, 2008 and 2010) trials that were carried out in two different localities in the Czech Republic. | Organic farmers have become more interested in the marginally grown (neglected) cultivars, as spring forms of the hulled wheat varieties (eincorn, emmer wheat, spelta wheat) or intermediate forms of the soft wheat. 173 land races from the gene bank at the RI in Praha-Ruzyně were grown on the organic certified parcel and evaluated in 2008. The trial aimed to evaluate the conditions of the competitiveness to weeds, tolerance to diseases, assimilation of the sun shine and establishment of the yield. | Organic farmers look to the possibilities of growing neglected crops, such as the spring forms of hulled wheat – einkorn, emmer and spelt – for support in developing the organic farming system. In 2008, 169 landraces from the gene bank at the Crop Research Institute in Prague were tested on certifi ed organic plots. The experiment was aimed at fi nding suitable varieties for the organic farming system. | Ze strany ekologických zemědělců je zájem o pěstování jarních forem pšenice špaldy (Triticum spelta L.), proto jsme zhodnotili agronomicky významné znaky a pekařskou jakost šesti krajových odrůd jarní špaldy. Hodnocené odrůdy byly náchylné k chorobám pšenice a k poléhání. Výnos tvořily délkou klasu a hmotností tisíce zrn. Výnos zrna byl na nižší úrovni, ale hektarový výnos hrubého proteinu byl na stejné úrovni. Předností jarních špald byl vysoký obsah proteinu a mokrého lepku, který však byl slabší a méně bobtnavý. |

| Metodika přináší informace o možnostech využití širší druhové diverzity rodu Triticum L. v ekologickém zemědělství. Volba vhodného druhu nebo odrůdy pro konkrétní půdně-klimatické podmínky farmy je stejně jako volba osiva jedním ze základních stěžejních opatření, vedoucí ke zvýšení efektivity hospodaření na orné půdě. | Organic farmers are interested in the growing of spring spelt wheat forms (Triticum spelta L.). Therefore, the important agronomical characteristics and baking quality of six spring spelt wheat landraces were studied and evaluated. The studied and evaluated cultivars were inclined to lodging and wheat diseases. Their yield rate is determined by the length of the spike and the weight of one thousand grains. The grain yield and the crude protein yield per hectare achieved the same level in organic farming. The spring spelt wheat forms stand out in high protein content and wet gluten content; the gluten was, nevertheless, weaker and less swollen. |

| As water deficiency becomes a more frequent cause of the reduction in wheat yield levels, the search for donors of drought tolerance to be bred into adapted land races becomes urgent. Drought tolerance has been evaluated by the 13C discrimination method in six land races of emmer wheat (Triticum dicoccum SCHRANK), compared with land races, obsolete cultivars and modern varieties of soft wheat (Triticum aestivum L.).
