We propose a structural model of antecedent factors that affect the frequency of soy consumption. This model, suggests that soy-general knowledge influences perceptions about nutrition concern, health benefits of soy, soy related personal beliefs and personal attitudes toward soy. Health benefits of soy, in turn, impacts soy-related personal beliefs and personal attitudes toward soy. Additionally, soy-related personal beliefs influence personal attitudes toward soy. Finally, both nutrition concern and personal attitudes toward soy drive the frequency of soy consumption. Discrepancies in the attitude between US and UK consumers toward application of biotechnology in crop production and medicine were examined using data from mail and online surveys. Results showed that more than 31% (46%) of US (UK) respondents were opposed to biotech foods while only 16% (18%) opposed biotech medicine, respectively. Perceived risks and benefits of agro-biotechnology and medical biotechnology were significant in determining overall attitude toward application of biotechnology in agriculture and medicine i.e., perceived risks (benefits) caused consumers to oppose (support) application of biotechnology in food production and medicine. |

A censored negative binomial regression model was used to study the relationships between the selection of irradiated beef packages, the beef storage and cooking processes, and demographics. Data were collected using a supermarket simulation technique and an exit survey of a panel of Georgia consumers. The results showed that those shoppers who stored (refrigerated) ground beef packages before cooking or freezing were likely to choose more irradiated ground beef packages in a trip to supermarkets than were those who cooked or froze the products immediately. The study evaluated the influence of the Food and Drug Administration (FDA)'s regulatory action regarding the health benefits of soy-based foods on soy consumption. The results indicated that frequent users of soyfood products who were exposed to the FDA's decision would be more inclined to increase their consumption of soy-based foods as compared to those who were not exposed to such information. Yet the information about FDA's decision did not influence the behavioral intentions of infrequent-or non-consumers. This study has identified several important factors affecting consumer negative perceptions about beef irradiation. The effects of these factors boil down to two main points: lack of trust in the adequacy and enforcement effectiveness of food safety regulations and consumer ignorance about the irradiation process. This implies dissemination of information about food irradiation and enhancement of consumer trust in the mechanism of food safety regulation can be effective instruments to increase consumer acceptance of beef irradiation. |

The objective of the study is to examine factors affecting the organization and success of farmers markets. A survey was conducted among vendors and market managers in Missouri. The preliminary results indicated that location of the farmers market, absence of wholesalers, and degree of supervision by market managers, market managers household attribute including children in the household determined level of success. Level of success was represented by number of vendor participation at the peak of the season. Farmer market attributes including parking spaces and petting zoos played crucial role in bringing in patrons, therefore increasing vendor participation. Uniform pricing policy was important to attract more vendors. |

This study explores the application of risk perceptions as a segmentation tool in the poultry meat market. Principal component analysis is used to examine data from a 2006 survey on a potential avian influenza outbreak in the U.S. The results suggest that the perceived level of safety of poultry meat will drive consumption choices in the case of an avian influenza outbreak. Based on the perceived safety level, the poultry meat product market was categorized into those that are home cooked and from familiar brands, the technological/novel, and organic/fast food poultry products, with the first category being perceived as the safest and the third as the least safe.
