Paddy storage may cause considerable losses and changes in quality of rice. The objective of this study is to determine changes in some physical and chemical properties of rice grains during storage. The experiment was conducted at Pathumthani Rice Research Center during May 2012 – January 2013. PTT1 variety was used for low amylose rice, and PSL2 for high amylose. Samples were taken and stored in 2 kg woven plastic sack at room temperature. The PTT1 and PSL2 samples were stored for 8 and 6 months, respectively. Changes in the physical and chemical properties of rice grains were observed. The survey was conducted in 2013 in order to collect the information on production management of Kao Dawk Mali rice from various sources, i.e. seed sources, farmers' fields, local mills in the area of north eastern and upper northern Thailand, and also from the exporters. The samples of Kao Dawk Mali rice were taken for evaluating their grain physical and chemical properties. The content of 2-Acetyl-1-Pyroline (2AP) of those samples were measured in order to evaluate for their aromatic levels. Soil samples from each farmers' fields were also taken to analyse for soil texture, soil pH, soil nutrients and soil organic matter. Gall midge is a major problem in the upper Northern part, a glutinous rice line PRE04012-20-1-1-1 was derived from a single cross between Sahm Samai and PRE96011-SPT-1-2-2-1-1 since 2004. The farmer field trials had tested in 2011-2013. In the wet season the high potential yield was 1,043 kg/rai while the average yield was 703 kg/rai which is non significant different from 710 kg/rai of RD14 and 704 kg/rai of SPT1. In the dry season the high potential yield was 916 kg/rai while the average yield of PRE04012-20-1-1-1 and SPT1 were 714 kg/rai, but lower than RD14 (759 kg/rai) by 6 percent.
