In this study, quantification and stability analysis of 2-Acetyl-1-pyrroline (2AP) in different growth stages of two fragrant soybean cultivars, Chamame and Kaori, and one non-fragrant soybean cultivar, Chiang Mai 60 (CM60), grown for seven environments at Maejo University were reported. The results revealed that 2AP concentration was the highest in full seeds at R6 stages, followed by in leaves at V5 and in full pods at R6 being 6.21, 3.08 and 2.58, respectively. The seven environments were divided in into 4 groups. Group I comprised rainy seasons in 2009 and 2010, group II composed of dry seasons in 2008, 2009 and 2010, and group III and IV contained only rainy season in 2008 and 2009, respectively.
