Preservation of fresh edible cactus stems (Opuntia ficus indica Mill.) by modified atmosphere packaging Phyton

Cactus stems, the cladodes of Opuntia spp. cacti, are consumed in Mexico and other countries due to their fresh and herbaceous flavor, and because of their widely known nutraceutical benefits. In order to extend the postharvest life of this vegetable, the effect of a modified atmosphere packaging (MAP) was studied in cactus stems of the cultivar Atlixco stored at 4 ± 1 °C for 20 days under three types of atmospheres: (1) air (passive atmosphere), (2) 5 kPa O2 + 4 kPa CO2, and (3) N2. During storage, the titratable acidity decreased and the color of cladodes became darker and less green; however, the 5 kPa O2 + 4 kPa CO2 atmosphere was able to preserve both quality characteristics. ABSTRACT Degreening is a postharvest technique that consists of applying ethylene to oranges fresh fruits to improve skin color. In Brazil, this technique is still not widely applied due to a lack of specific research, resulting in poor fruit coloration, which limits the oranges’ exportation. The objective of this study was to investigate the de-greening effect of ethylene application after cold storage in ‘Valencia’ oranges. The ethylene treatments (0; 5 and 10 µL L-1 for 96 h at 22°C) were applied after storage for 30 days at 5°C. Intermittent warming of 'Tahiti' lime to prevent chilling injury during cold storage Scientia Agricola

Storage of 'Tahiti' limes (Citrus latifolia) at low temperature allows the marketing period to be extended. However, the loss of the green skin color and the occurrence of chilling injury (CI) prevent this extension. The purpose of this work was to verify the efficiency of intermittent warming (IW) in 'Tahiti' lime quality maintenance during cold storage. Fruit were submitted to IW (20ºC for 48 hours every 7 or 14 days or 38ºC for 24 hours every 14 days) during cold storage at 5ºC. Fruit were also stored at 5 and 10ºC continuously. Cold storage of 'Tahiti' lime treated with 1-methylcyclopropene Scientia Agricola

The storage of 'Tahiti' limes under low temperatures enables the extension of the commercialization period. However the loss of the skin green color and the occurrence of chilling injuries prevent such advantage. The purpose of this work was to verify the efficiency of 1-methylcyclopropene (1-MCP), an inhibition of ethylene action, during the cold storage of 'Tahiti' lime. Fruits were treated for 12 hours with 1-methylcyclopropene at concentrations of 0 or 1.0 mL L-1 and then were stored at 5 or 10ºC for 30, 60 and 90 days of storage (+ 3 days of simulated marketing at 20ºC). This work aims at evaluate ethanol effect of acetaldehyde application in post-storage quality of 'Royal Gala' apples maintenance, and to compare them with consolidated storage techniques. Thus two experiments were performed during the years of 2008 and 2009. In the first experiment (2008), the application of ethanol, acetaldehyde or 1-MCP and ethylene scrubbing were tested. Fruits were stored in controlled atmosphere (CA) with 1.0kPa O2 and 2.0kPa CO2 at 0.5°C. In the second experiment (2009), the treatments tested were ethanol application combined or not with low relative humidity (LRH) and LRH alone. ABSTRACT Consumers around the world appreciate strawberries for their taste. They have low calories and high concentrations of soluble fibers, vitamin C and flavonoids. This paper verified the combined effect of O2, CO2, and N2O levels on ‘Oso Grande’ strawberries stored at 10° C, under controlled atmosphere (CA). Five different gas mixtures were used: 0.03 kPa CO2 + 20 kPa O2, 80 kPa N2O + 20 kPa O2, 90 kPa O2 + 10 kPa N2, 60 kPa O2 +40 kPa CO2, and 20 kPa O2 + 20 kPa CO2 + 60 kPa N2O. An original method for producing acetaldehyde and diacetyl by yeast fermentation BJM

Abstract In this study a natural culture medium that mimics the synthetic yeast peptone glucose medium used for yeast fermentations was designed to screen and select yeasts capable of producing high levels of diacetyl and acetaldehyde. The presence of whey powder and sodium citrate in the medium along with manganese and magnesium sulfate enhanced both biomass and aroma development. A total of 52 yeasts strains were cultivated in two different culture media, namely, yeast peptone glucose medium and yeast acetaldehyde-diacetyl medium. Impact of engineered Streptococcus thermophilus trains overexpressing glyA gene on folic acid and acetaldehyde production in fermented milk BJM

The typical yogurt flavor is caused by acetaldehyde produced through many different pathways by the yogurt starter bacteria L. bulgaricus and S. thermophilus. The attention was focused on one specific reaction for acetaldehyde and folic acid formation catalyzed by serine hydroxymethyltransferase (SHMT), encoded by the glyA gene. In S. thermophilus, this enzyme SHMT also plays the typical role of the enzyme threonine aldolase (TA) that is the interconvertion of threonine into glycine and acetaldehyde. ABSTRACT: The objective of this study was to review technological and toxicological factors related to presence of carbonyl compounds found in wines, including acetaldehyde, formaldehyde, acrolein, ethyl carbamate (EC) and furfural. Acetaldehyde and formaldehyde may be formed through the ethanol and methanol oxidation, respectively. Acrolein may arise as a thermal degradation product of glycerol, amino acids, carbohydrates and triglycerides or by metabolic activity of microorganisms. In addition, acrolein and furfural are formed during wood combustion; therefore, these aldehydes may be present in raw materials due to the environmental contamination.
