Toxigenic fungi were studied in beans (Phaseolus vulgaris L.) of Classes black and color, cultivated in different regions of the State of Santa Catarina, south region of Brazil. The mean counts of filamentous fungi were 2.8 x 103 and 6.7 x 103 CFU/g for beans Classes black and color, respectively. Penicillium spp., Aspergillus spp. and Phoma spp. were the most frequent genera isolated, followed by Ryzopus spp., Alternaria spp., Helminthosporium spp., Cladosporium spp., Botrytis spp., Fusarium spp., Trichoderma spp., Curvularia spp. and Dreschelera spp. Among beans Class black, 24.6% of the Aspergillus strains produced mycotoxins: 13.1% produced aflatoxins (AFs); 11.5% produced ochratoxin A (OTA) and 28.9% of Penicillium produced citrinin (CTR). On the... |

Iron and zinc deficiency can cause anemia and alterations in the immune response and impair work capacity. To minimize this problem, biofortification has been developed to improve and/or maintain the nutritional status of the population. Beans are an important source of carbohydrates, proteins, and minerals. The objective of this study is to characterize biofortified beans, quantify the minerals in different cultivars, and determine mineral dialysis. Grains of raw and cooked beans were analyzed for moisture, protein, lipids, fiber, minerals, and in vitro availability using four treatments and one control. The data were analyzed using ANOVA, and the Tukey test (p<0.05). The chemical composition of the raw and cooked treatments showed a moisture content... |

ABSTRACT Cowpea beans are of great socioeconomic expression for the rural population in North and Northeastern Brazil. This legume is rich in essential nutrients and exhibits great resistance to water stress. However, for grain processing, it is fundamental to study legume behavior during the hydration process. This study aims to evaluate the mass transfer of different cowpea beans via mathematical modeling to determine the viability of hydration for commercialization as a canned product. Physical and chemical analyses of lipids and moisture were performed. The soaking process was performed in a water bath with distilled water at 30, 40, and 50 °C. The mathematical model of Peleg presented satisfactory adjustments, with R2 values ranging between 99.78% and... |

This study aims to evaluate the leaf concentration of nitrogen and phosphorus correlated to the production of photoassimilates in beans plants (Phaseolus vulgaris L.) under high [CO2] and drought stress. The experiment was conducted in Viçosa (Brazil), during the period from April to July 2009, by using open-top chambers equipped with CO2 injection system. The drought stress was applied, through the irrigation suspension, during the period from flowering to maturation. The experimental design was randomized blocks in split-plot scheme with four replication, where the plots with plants grown in [CO2] of 700 mg L-1 and [CO2] environment of 380 mg L-1 and the subplots with plants with and without drought stress. The results were submitted to ANOVA and Tukey... |

ABSTRACT: During the years 2001 and 2002, four experiments were conducted in the winter season, under irrigation and in the raining season in the experimental area of the Embrapa Cerrados Research Center at Planaltina, Federal District. The objective was to identify cultivars that presented the following characteristics: resistance to diseases, high yeld, resistance to lodging, desirable plant height and good market acceptance, to be indicated for cultivation in the Federal District. It was concluded that the cultivar BRS Supremo is indicated for this region, due to its high yield characteristics, erect type, resistance to diseases and lodging, as well as its excellent cooking qualities. |
