Sugar cane molasses is a cheap by-product of the sugar cane industry. This product was used for growth and production of bacteriocins by Lactobacillus plantarum BN and evaluated for its potential application in the extension of the shelf-life of raw meat. Bovine meat cubes were dipped in the filtered and neutralized supernatant of the fermented broth (Treatment A) and stored at 5ºC. Counts of psychrotrophic and mesophilic aerobic microorganisms, pH determination and total acidity were performed on meat cubes after 0, 3, 6, 9, 12 and 15 days. Abstract Per capita meat consumption in Chile is 89.1 kg per year in 2014, of which approximately 25 kg are beef. Some 50% of the beef consumed is imported as vacuum packaged meat from two species, Bos taurus, produced mainly in Chile, Argentina and Paraguay, and Bos indicus, which comes mainly from Brazil and Paraguay. The latter two countries account for the highest levels of beef imports in Chile. This study identifies the effects of free trade agreements at the multilateral (WTO) and regional (FTAA and MERCOSUR-EU) levels on the bovine meat markets in several regions. In order to evaluate these effects, we used a spatial allocation model, presented as a mixed complementarity problem (MCP). The study identifies the changes in production and consumption levels, as well as the changes in producer and consumer surplus, in four possible scenarios. In general, gains to bovine meat producers in the MERCOSUR countries are expected in all scenarios. Although, these gains are greater when we simulate a multilateral trade liberalization, with or without the elimination of subsidies. |

The studies on agribusiness are based in a systemic dimension, seeking to understanding the relationship among agents and the search for greater efficiency among or intra-chains. For such purpose, understanding the several flows concealed in the agri-food networks (and in their chains) has become necessary: flows of materials and products, capital flows, flows of information. O Brasil é o principal player do mercado mundial de carne bovina, sendo que São Paulo se destaca como maior exportador e segundo maior produtor nacional do produto. Porém, o Estado vem perdendo market share, pois nos últimos anos a maior parte dos investimentos produtivos têm se concentrado no Centro-Norte do país. Através do levantamento de dados estatísticos, de revisão bibliográfica e de entrevistas com agentes-chave, o presente estudo identificou os principais aspectos críticos da competitividade da cadeia produtiva da carne bovina de São Paulo.
