This study was conducted to evaluate the effects of the inclusion of low-purity crude glycerin (CG, 63.1% of glycerol) in the diets of feedlot-finished goats on the weights and yields of the non-carcass components, with are frequently used in regionals dishes (buchada and panelada). Forty castrated male goats with the initial mean body weight of 19.70 ± 2.30 kg were used. Experimental treatments consisted of inclusion of CG at levels of 0, 6, 12, and 18%, based on dry matter. The weights of the lungs, spleen, total organs (TWO), and TWO yield, as a function of the slaughter body weight, decreased linearly. The objective of the present work was to evaluate the microbiological characteristics of the precooked goat "buchada", a typical dish in North East of Brazil, composed mainly by goat viscera such as heart, lungs, liver, spleen, intestines, stomach and blood. Samples of "buchada" produced at the different areas of the State of Paraíba, Brazil, presented a high number of aerobic mesophilic bacteria, with values ranging from 5.5 to 6.9 log10 CFU/g. All samples presented total coliforms, and 96.6% presented fecal coliforms, with values between 2.3 and 5.0 log10 NMP/g. O objetivo deste trabalho foi avaliar o rendimento de buchada, os pesos e rendimentos de órgãos, vísceras e subprodutos da carcaça de cabritos, sem padrão racial definido, alimentados em pastejo na Caatinga, com ou sem suplementação. Dezoito cabritos machos castrados, com peso vivo inicial de 15±0,55 kg, foram mantidos em área de pastejo na Caatinga durante 105 dias. Os animais foram submetidos a três tratamentos em delineamento inteiramente ao acaso: pastejo à vontade, sem suplementação; pastejo restrito; e pastejo à vontade, com suplementação de farelo de soja e palma forrageira. The objective of this study was to evaluate the biometric and morphometric measures, regional composition, carcass characteristics and non-carcass components of Santa Inês lambs submitted to levels of corn replaced by cactus pear in the diet. It was used 45 Santa Ines non-castrated male lambs, with average initial live weight of 25.50 ± 0.48 kg as a completely randomized block design with five treatments (0; 25; 50; 70 and 100%) and nine replicates. There was an effect of the diet on slaughter weight, empty body weight, hot and cold carcass, cold carcass weight, shoulder weight and loin weight. Objetivou-se avaliar os pesos e rendimentos de órgãos, vísceras, subprodutos e componentes comestíveis de 32 ovinos da raça Morada Nova, castrados, confinados, recebendo dietas contendo 20; 40; 60 e 80% de concentrado. Os animais (8,11 ± 1,15 meses de idade e 19,67 ± 2,97 kg de peso inicial) foram abatidos aos 30,0 kg.
