This experiment was based on observations of 72 juveniles of Nile tilapia (Oreochromis niloticus), sexually reverted with an initial mean weight of 37.27 ± 4.92g, distributed in 12 cages of 100 l to evaluate the effects of the yeast inclusion as proteins source in the diet. The fishes were distributed in a completely randomized design with four treatments (0; 20; 40; and 60%) of yeast protein in substitution to the protein of traditional sources with three repetitions. Effects of the treatments were not observed (p > 0.05) on the survival and to food conversion. It was observed a quadratic effect on weight gain (Y = 73.39 + 0.173X - 0.0034X²; R²= 0.9986). A natural endowment of three coast lines with different structures, of numerous rivers coming from mountainous regions and of different climatic conditions has enabled France to develop one of the first European aquaculture sectors in terms of volume with almost 300 000 tonnes in 1996. L’engraissement du thon rouge a connu un regain d’intérêt depuis le boom économique japonais i.e. vers le milieu des années 70. A cette époque les projections ont mis en évidence que la production mondiale ne suffirait plus à satisfaire le marché japonais. C’est ce constat qui a amené les grandes firmes japonaises à réfléchir sur l’engraissement du thon rouge. Cette technologie fût exportée en Espagne où l’activité a démarré effectivement au début des années 1990 pour atteindre son apogée vers les années 1996-1997. Con el objetivo de evaluar el efecto sobres el crecimiento y la supervivencia, de diferentes densidades de siembra de tilapia roja en jaulas de diferentes volúmenes (4, 6 y 16 m3) se desarrollaron tres ciclos de engorde en la bahía de Casilda, provincia Sancti-Spíritus. La selección del sitio se realizó a partir de una red de cinco estaciones muestreadas en lluvia y seca para determinar los parámetros físico, químicos, batimétricos y turbidez. Los alevines se adaptaron al agua de mar en tanques de 12 m3, con flujo de agua marina (1.4 - 2.8 L/segundo) durante 24 horas con supervivencia de 96%.
