Carcass characteristics of small and medium-frame Aberdeen Angus young steers, finished in feedlot and slaughtered with similar subcutaneous fat thickness are evaluated. The average age and live weight at the start of feedlot were respectively 298 days and 202 kg. The steers were confined during 158 days, and slaughtered with average subcutaneous fat thickness of 6.4 mm. The feed consisted of sorghum silage and concentrate at 60:40 ratio of dry matter during the first 63 days and 50:50 afterward. The frame was calculated by formula F =-11.548 + (0.4878xh) - (0.0289xID) + (0.0000146xID²)+(0.0000759xIDxh), where h is the height and ID the age, in days. Steers with medium frame showed superiority in important marketing aspects such as warm (p < 0.0001) and... |

The aim of this study was to compare four genetic groups of sheep on the carcass and meat quality traits. Thirty-three contemporary and unrelated male lambs, all of single birth were used in the experiment, being thirteen from the Santa Inês (SI) breed, seven from the Brazilian Somali breed (BS), six from the Morada Nova (MN) breed and seven from the ½ Dorper - ½ Morada Nova (F1) crossbreed. The genotypes SI, BS and F1 presented similar performances in relation to hot and cold carcass weights, which values were 10.76±0.53kg and 10.46±0.52kg for SI, 9.20±0.73kg and 8.99±0.71kg for BS, and 9.35±0.73kg and 9.13±0.71kg for F1, respectively. The BS had a better hot carcass yield (47.10±0.88%) and cold carcass yield (46.00±0.87%). Better carcass conformation was... |

ABSTRACT: This study aimed to evaluate the effects of feed restriction on the carcass characteristics of castrated Canindé goat kids. A randomized block design was used, in which 21 goat kids with a body weight (BW) of 15.9±1.0kg were allocated to three levels of feed restriction: ad libitum, 20% and 40% restriction related to the ad libitum intake. The diet consisted of 55% forage (Tifton) and 45% concentrate. All animals were slaughtered when the kids fed ad libitum reached a BW of 25kg. After slaughter, the carcasses were chilled for 24 hours and subsequently measured. Kids fed ad libitum and subjected to 20% feed restriction showed similar morphometric carcass measurements, except for the chest circumference. Goat kids fed ad libitum exhibited greater... |

The objective of this study was to evaluate the effect of including guava wastes in the feed on the performance and carcass yield of broiler chickens. An experiment was carried out with 300 male Cobb strain chicks, in a randomized complete design with five levels of waste and five replications. A reference diet based on corn and soybean meal and four feeds with 3, 6, 9 or 12% guava waste were evaluated. The feed intake, weight gain and feed conversion were assessed weekly; the weight at slaughter and the weight and yield of eviscerated carcass, carcass without feet and head, breast, drumstick, thigh, wing, back, edible viscera and abdominal fat were assessed. The inclusion of guava waste in the feed promotes performance and carcass yield similar to that... |

The experiment evaluated the meat yield of prepared beef cuts, bone and trimmings of steer and culled cow carcasses. Culled 72-month-old Braford cows, 496 kg live weight and 36-month-old steers, 494 kg live weight were used, all from the same herd and finished on ryegrass pasture. A randomized complete design, with two treatments and 15 replications, was used. Hot carcass weight was lower for cows (248 kg) than for steers (263 kg). Steer carcasses presented better conformation, lower chilling loss, shorter (128.6 vs. 137.7 cm), with longer and thicker limbs compared to cows and similar fat finishing. Steer carcasses showed, compared to cow carcasses, always in the same order, similar side cut yield (13.5 vs. 13.4%), higher forequarter yield (38.4 vs.... |

The objective of this study was to evaluate total and individual meat yield of boneless cuts, retail cuts, descarded trimmings and carcass bones of 38 Braford castrated steers, slaughtered at 22 months of age after feedlot finishing. Carcasses were classified in three ranks according to fat coverage: even fat coverage over the carcass, with fat thickness of approximately 6-8 mm on the 12th rib; animals with uneven fat cover, with fat thickness of 3-5 mm and steers with insufficient fat coverage over the carcass, with fat thickness of 1-2 mm. Shrinkage losses decreased as fat coverage increased, and it was 2.57, 2.22, and 1.96%, respectively, for insufficient, uneven, and even fat coverage whereas flank yield increased, reaching values of 13.04, 13.47 and... |

The objective of this study was to evaluate the performance, qualitative, morphometric and quantitative carcass traits of Santa Inês lambs of different frame sizes finished in a feedlot. Twenty 120-day-old intact lambs with a 25.0±3.1 kg average body weight at the beginning of the experiment were used. Lambs received a diet containing 17% crude protein and 2.70 Mcal/kg dry matter. Frame size influenced performance and tissue composition in the carcasses of the lambs. Lambs with large frame sizes showed better carcass conformation compared with those of medium-sized frames. Frame size was found to have a significant effect on rump perimeter. Large-framed lambs showed higher compactness on the carcass index and carcass dressing area compared with... |

The objective of this study was to evaluate morphometric measures, carcass yields, absolute weights and yields of commercial cuts of carcass of kids with no defined breed. Eighteen castrated male goats, with average weight of 15 kg were used. The experimental period lasted 105 days. The experimental design was completely randomized; animals were allocated to three treatments: free grazing without supplementation; restricted grazing without supplementation and free grazing with supplementation. Animals were supplemented (1% of body weight) with forage cactus (Opuntia ficus - indica, Mill) and soybean meal (Glycine max). The feeding consisted of continuous grazing on caatinga. Supplemented animals had higher live slaughter weight and body score, and... |

The experiment evaluated total and individual yield of commercial cuts, bones, and trimmings of carcasses from 38 Braford steers at 22 months of age finished in a feedlot. Carcasses were ranked according to three conformation classes (good minus = score 10; good = score 11; good plus = score 12), and three weight classes (heavy = 229.4 kg, intermediate = 205.0 kg, and light = 184.0 kg, ranging from 222.9 to 250.4, 201.5 to 209.0, and 170.0 to 190.3 kg, respectively). Carcass cold shrinkage was not affected by conformation, but it was significantly lower in heavy (1.83%) than in intermediate (2.53%) and in light carcasses (2.30%), which were not different among each other. Carcass flank percentage was not affected by conformation, but it was significantly... |
