Bacillus cereus adherence to stainless steel used to milk contact surfaces was observed, depending on the cleaning and sanitizing procedures applied and the physicochemical properties of the surfaces. Numbers of surviving B. cereus after hygiene procedures were affected by temperature, the concentrations of both alkaline and acid washes, and the pH of the chlorine solution. The adhesion of B. cereus to the stainless steel was not thermodynamically favorable, and the adherence of this microorganism occurred in lower number, in accordance to the thermodynamic aspect of adhesion. |

Abstract White cheese, kashar cheese, yogurt, and ayran are among the most common products produced by the dairy industry in Turkey. The present study determined the production cost of 1 kg of these packaged products as well as the financial implications on their distribution and the total cost. The study also estimated the cost factors affecting the profitability of the products by identifying the cost differences between production regions and scales, using a mean regression model for each product. The study used the data collected through a survey involving 15 dairy plants of three different sizes located in five different regions and involved in raw milk production. The study found a 2-year average capacity utilization rate of the businesses to be... |

ABSTRACT: The objective of this research was to use the modeling and computer simulation to support decision makers, aiming to increase the productive capacity of the agro-industry of LaticínioFunarbe. Specifically, it has modeled the current yoghurt production sector for simulation that enables it to meet the new demand. The Arena 14.7 simulation software was used to conduct the modeling. To validate the model, the output of yoghurt production collected at the factory for three months was compared with the output from the simulated computational model. Two indicators were established to perform analyzes of four different scenarios. The implemented model resulted in an increase in the production capacity of 5,000L.d-1 of yoghurt, corresponding to a... |

ABSTRACT: Whey is a by-product of the dairy industry of great importance due to its high nutritional value, and can be used for the manufacture of fermented dairy drinks which, combined with fruit, increase the nutritional value and add characteristic flavors. Therefore, a fermented dairy beverage with caja-mango pulp (Spondias dulcis) was elaborated and its nutritional information as well as the physical-chemical stability were evaluated during storage. The results showed that the nutritional information met the requirements stipulated by the Brazilian legislation. The physical-chemical stability of the dairy fermented drink in terms of pH, acidity, syneresis and sedimentation was influenced by the storage time, possibly associated with uncontrolled... |

ABSTRACT: This study aimed to evaluate the effect of variations in organic load (hydraulic retention times - HRTs: from 2 to 0.5 day) and in alkalinity (NaHCO3 from 4,000 to 1,000 mg.L−1) on methane production. Biomass of sewage sludge was inoculated and stabilized on 1" polypropylene rings. The rings were immersed in the liquid phase (8.41 L) of an upflow anaerobic filter reactor (12.22 L). A solution of 5 g of whole milk powder per liter was used to simulate effluent from the dairy industry. Process effectiveness was measured by chemical oxygen demand reduction, biogas production, and biogas methane content. Biogas production started at a 2-day HRT and synthetic effluent alkalinization with 4,000 mg.L−1 NaHCO3. The best operation condition was at 1-day... |

The aim of this study was to isolate microorganisms that produce lipase and to assess the efficiency of COD removal intreatment of cheese whey under different operating conditions. The microorganisms were isolated from cheese whey and a commercial product; it was selectedthreemicroorganisms that obtained the best response to the lipolytic activity test through the enzyme index. Then, the microorganisms were inoculated in sterilized cheese whey samples, for two pH values (6.2 and 7.0), incubated at 35 °C and 150 rpm in shaker and the lipolityc activity and the efficiency of COD removal were measured in two time periods (24 and 48h). After incubation, it was observed that the treatments showed a good removal efficiency of COD for the pre-treatment and the... |

The milk processing systems of 4 dairy farmers in the hilly terrain of south-central France were surveyed to clarify those characteristics and discuss the transition process of milk processing system in the cold and humid climate condition, of which the origin came from the dry areas of Asian Continent. The characteristics of milk processing system in the south-central France was the specialization for mature cheese making conducted by the technique of solidifying-additives using series. Although the technique of cream separating series had also been used in the region, all 4 dairy farmers don't currently adopt it because of its lower benefit than cheese making. Hence, butter was currently made not from cream, but from whey that was produced in cheese... |

The goal of this paper is to assess the effect of regulatory burdens in the European dairy industry on its competitiveness. A theoretical foundation is provided by transaction cost economics and total quality management insights. The effects of legislation on administrative requirements and competitiveness are supposed to be mediated by impacts on innovativeness, company strategy, food safety system availability, as well as the available information & communication capabilities. We will connect to previous research (Wijnands et al., 2007) and the findings therein. Four sub-questions are addressed: • what is the relationship between administrative burdens, innovation and competitiveness? • what is the relationship between administrative burdens, food... |

The dairy industry is a major contributor to both the New Zealand economy as a whole and to the Waikato regional economy in particular. The industry is experiencing a period of considerable change, with increases in dairy conversion, increased intensification, and increasing use of nitrogen fertilisers, each of which has an associated environmental cost. In this paper the productivity performance of the mature dairy industry in the Waikato region is investigated, using panel data at the sub-regional level from 1994 to 2007. Overall we show that, under a range of specifications, productivity growth independent of increasing land use and herd numbers has been significantly below the four percent industry target. This suggests that, if the four percent goal... |

This paper discusses the economic implications of the preferential trade agreements that New Zealand is currently negotiating, using a computable general equilibrium modelling framework. The New Zealand dairy industry is a particular focus in the results, which come from the GTAP model produced by Purdue University. Results are discussed from the independent simulations of preferential trade agreements between New Zealand and Korea, New Zealand and India, New Zealand and Russia, Belarus and Kazakhstan, New Zealand and the Gulf Cooperation Council, and expansion of the Trans-Pacific Partnership to include Australia, Peru, Viet Nam, Malaysia, and the United States of America. |
