Most local organic market chains have inherent problems in moving from niche to volume, and mainstream large-scale market chains have inherent difficulties in securing and advancing organic values. Ziel des Projektes „Neue und innovative Formen der Direktvermarktung landwirtschaftlicher Produkte – Analyse und Erarbeitung von Handlungsempfehlungen“ (FKZ 15NA192) ist es, neue, innovative Ansätze der Direktvermarktung im Hinblick auf Verarbeitung und Distribution bis hin zu Kommunikation und Verbrauchereinbindung zu untersuchen und deren (Entwicklungs-)Chancen und Risiken zu bewerten. Der verpackungsfreie Einkauf ist ein aktueller Trend in Deutschland und Europa. In Deutschland existieren hierzu bereits verschiedene Ausprägungen dieser innovativen Form des Lebensmitteleinzel‐ handels (LEH). Dies sind zum einen Geschäfte, die konsequent das „unverpackt“‐Prinzip verfolgen („Konzeptläden“), des Weiteren Bioläden, die einen Teil der Waren „unverpackt“ anbieten und zum anderen Dienstleistungsanbieter sogenannter „Bulk Bins“, also großer Behältnisse zur Präsentation und zum individuellen Abfüllen der jeweils gewünschten Lebensmittelmenge.
