In the last few decades the number of civilization diseases has surged and mortality rate caused by them has been responsible for most deaths for a long time. Researches found out that it is the new way of life of people that is responsible for it. Study outlines the reasons for the development of health-protective foods, then it makes the notion of functional foods and the market facts that hinder their spread clear. Authors analyse the basic model of nutrimarketing and they outline the consequent business and collective marketing tasks. Supporting it we launched a representative survey with 402 people to test the consumers’ judgement. The Hungarian meat-market can be characterised by intensive transitions both in market actors and product-structure. There is a decrease in the consumption of pork and at the same time in this category an increase in the share of processed meat products. There are also increasing differences in the quality and price-level of processed meat products. This transition highlights the importance of relations between the meat production industry and the meat retail trade. In the framework of a field-study we have analysed the opinions of more than two hundred meat trade specialist on supplier-retailer relationships. The development of Hungarian agricultural business economics and management used to evolve in accordance with international leaders of the sector. On the other hand, a paradox situation has emerged in Hungary in the last two decades, in which such knowledge is only partially applied as a consequence of insufficient knowledge transfer and highly restructured agriculture. In the framework of an EU-6 research project, reviewing the agricultural risk management practices of some EU Member States, including Hungary, became possible.
