Extraction of phenolic compounds from organic dried apples: comparison between conventional, microwave- and ultrasound-assisted extraction methods Organic Eprints

The aim of this study was to compare a conventional assay with microwave- (MAE) and ultrasound- (UAE) assisted extraction methods on the extraction of phenolic compounds from organic dried apples by evaluating the content in catechin, epicatechin, chlorogenic acid and quercitrin. Samples from two apple varieties (Golden Rush and Topaz) were analyzed. Methanol/water (70:30, v/v) was selected as the solvent mixture for the phenolic compounds extractions. The High Performance Liquid Chromatography coupled to diode array detection (HPLC-DAD) were used for the identification and quantification of the respective phenolic compounds. The effect of organic and conventional fruit cultivation system on mineral composition and sensory properties of cloudy apple juice Organic Eprints

The aim was to determine the differences in mineral composition and sensory properties of cloudy apple juice depending on apple cultivation system. Three indigenous Estonian cultivars were chosen on condition that the same cultivars would be grown in organic and conventional orchards at the same geographical location. ’Krameri tuviõun’ and ’Talvenauding’ apples were harvested from old (over 30 years) low maintenance orchard and ‘Krista’ apples from 10-years old experimental orchard. 100 kg of apples per cultivar and cultivation system were stored at +3±2°C for two months and then pressed into juice using Lancman waterpress. Sweet bell pepper is one of the best sources of ascorbic acid and a fair source of carotenoids in human diets. The levels of vitamin C are very variable and may be affected by maturity, genotype and processing. Vegetable freezing is one of the most efficient and adequate preservation methods. Organic fresh vegetables contained more bioactive compounds than conventional ones. Two bell pepper cultivars (Roberta and Ożarowska) have been selected for analysis. Vegetables were cultivated on organic and conventional farms in Poland. We have analyzed phenolic compounds from organically and conventionally grown blackcurrants and strawberries to test the idea if organically grown berries contain a higher amount of health-promoting phenolic compounds. Statistically significant differences between farms were found for almost all compounds. In strawberry, the impact of genotype and environment on the flavonol content was more important than the cultivation practice. The "health quality" from organically grown berries does not differ from those grown conventionally.

Effects of weed management strategies on quality and enteric pathogen contamination of organic lettuce Organic Eprints

Quality requirements for raw edible produce like lettuces include nutritional value and hygienic quality. Organic lettuce is often considered to cause a potential health risk for immunocompromised individuals due to assumed pathogen transfer from organically manured soils into lettuce heads (Lactuca sativa, var. capitata). The effect of different weed management strategies (rotary tiller, mouldboard plough combined with flame weeding, plastic mulch and straw layer, resp.) on pathogen transfer from fresh and composted farm yard manure were assessed in four field experiments in 2006 and 2007. Es wird über Ergebnisse zur Mehlqualität von Weizen berichtet, die mit einem neu entwickelten optimierten Backtest im Forschungsring e.V. Darmstadt im Rahmen eines BÖL-Projektes erzielt wurden. Der Test ermittelt das Potential einer Sorte unter optimierten Bedingungen (Knetzeit). Die Ergebnisse belegen, dass die untersuchten Sorten für hohe Backvolumina >660 ml/100g Mehl (Type 550) weniger Kleber benötigten als bisher angenommen. Anhand der gängigen Bewertungsmaßstäbe wie Kleber-und Proteinkonzen-tration konnte das tatsächliche Backpotential der Mehle nicht vorhergesagt werden.

Introduction: Mycotoxins are toxic compounds produced by the secondary metabolism of toxic moulds in the Aspergillus, Penicillium and Fusarium genera occurring in food commodities and foodstuffs. The range and potency of mycotoxins make this group of naturally occurring toxins an ongoing animal health hazard and a constant risk for contamination of the food supply. Mycotoxicoses are diseases caused by exposure to foods or feeds contaminated with mycotoxins. Mycotoxins exhibit a variety of biological effects in animals, such as liver and kidney toxicity, central nervous system effects or estrogenic effects. ORGANIC TEA HAS MORE HEALTH BENEFIT AND ENVIRONMENTAL ADAPTABLITY THAN CONVENTIONAL TEA Organic Eprints

Organic tea is booming in China since it is regarded as a high quality and healthy product. To confirm this believing, six pairs of organic and conventional teas from six farms in Zhejiang and Fujian Provinces, eastern China have been analyzed. The results show that organic teas had significantly higher tea polyphenols and water extracts compared to the conventional ones in most cases. Catechins, especially the epigallocatechin gallate, epicatechin gallate and epigallocatechin were significantly higher in organic tea. High variability in anthocyanin contents between different blackcurrant varieties Organic Eprints

The results confirm that blackcurrant is a good source of anthocyanins. However, remarkable variation in the anthocyanin content between varieties is evident. The anthocyanin profile is always dominated by four major anthocyanins, yet some variation appears in their relative proportions. The high anthocyanin content is usually most desirable in the blackcurrant products and this study shows that the choice of variety may have a great impact on it.

This work addresses possible ways in which animal manure might become contaminated by undesirable elements and how such manure might pose a risk to the health of soil organisms, animals, plants and humans. The purpose of the project was to gain more knowledge concerning potential contamination of manure by undesirable elements, such as residues of veterinary medicines and pesticides or high levels of heavy metals.

Økologiske kødprodukter konserveret med bær, urter eller krydderier Organic Eprints
Hansen, Flemming.
Forbrugerne ønsker nye kødprodukter i stedet for de gamle klassikere som skinke, kødpølse og spegepølse. Samtidig vil de gerne have madvarer med mindre salt og færre kemiske konserveringsmidler som fx nitrit. Ved at konservere med bær, urter og krydderier kan man udnytte de naturligt forekommende konserveringsmidler i planter og samtidig fremstille kødprodukter med en helt ny smag. I samarbejde med Institut for Fødevarer, Årslev og MAPP fra Århus Universitet samt virksomhederne Hanegal og Tulip arbejder DMRI Teknologisk Institut på at udvikle helt nye kødprodukter, der er tilsat udvalgte bær og urter med konserverende virkning.
