Organic foods in Danish municipal school food systems – a multistakeholder analysis of available evidence on constraints and perspectives Organic Eprints

Previous studies have shown that organic supply and healthy eating initiatives in school food services share common features. Both types involves changes in supply, the collaboration of a number of different stakeholders and both include a physical food part as well as a non physical symbolic aspect. Studies have shown that introducing organic food in public food systems seems to affect the nutritional profile of the food service and anecdotal evidence suggest that organic supply forces food services to rethink menus leading to healthier menus and that introduction of organic foods often leads to adoption of a food & nutrition policy. For some years now the number of all-day schools providing school meals in the federal state of Lower Saxony, Germany, has increased continuously. This paper aims at analysing the political determinants and the organization of the provision of school meals in Lower Saxony with a special focus on the provision of organic food and sustainability. As to methods, literature was researched and internet sources were evaluated. In addition, interviews with experts in the field contributed to the findings. Impact of year of harvest, genotype and cultivation method on bioactives and Pru d 1 allergen content in plums Organic Eprints

The present work studied the effect of the year of harvest, the genotype and the cultivation method on the nutritional quality and the allergen content of three plum cultivars. The common quality parameters and the phytochemical content strongly varied with the year and the cultivar, while the system of cultivation had a minor influence. In particular, ascorbic acid greatly decreased in 2016 compared to 2015, while polyphenols were higher in 2016. The health-promoting compounds, and particularly phenolics, were significantly correlated with the antioxidant capacity. Finally, the allergen content was strongly dependent on the content of flavan-3-ols, suggesting that this class of phenolics is determinant in influencing the allergen content in plums....

Protein quality and content of nitrite, nitrate and metals in commercial samples of organic and conventional cold meats. Organic Eprints

Twenty-six organic and conventional samples of cold meats were analysed and compared with respect to: meat protein quality, nitrite, nitrate and metal content to verify if organic products have any health advantage that may be attractive to consumers. Proteins quality was assessed by sodium dodecyl sulphate-polyacrilamide gel electrophoresis (SDS-PAGE) and two-dimensional electrophoresis (2D EF). Nitrite and nitrate content were measured by the Griess reaction. Metals were detected by atomic absorption spectroscopy. The spread of organic and agro-ecological farming (OF) methods in developing countries has raised a debate whether a large scale adoption of OF will increase or decrease global food security. This will however depend on a number of socio-economic factors together with the relative yield levels of OF versus conventional farming systems. Relative yields again depend on a number of agro ecological factors and the characteristics of farming systems before conversion. In areas with intensive high-input agriculture, conversion to OF will most often lead to a reduction in crop yields per ha by 20-45 % in crop rotations integrated with leguminous forage crops. Purpose – The purpose of this study was to examine whether organic food intervention strategies in Danish school meal systems can support the development of healthier eating patterns among pupils. Design/methodology/approach – This paper investigates the interrelation between the two trends: healthy eating and organic consumption. The study was undertaken among school food coordinators through a web-based questionnaire in selected Danish public primary schools. Food strategies of “organic” schools were compared to those of “non organic” schools. Közép-magyarországi paradicsom tájfajták vizsgálata ökológiai gazdálkodásban Organic Eprints

A tájfajták genetikai változatosságuk és alkalmazkodóképességük révén rendkívül értékesek, ugyanakkor az intenzív ipari termelés követelményeinek legtöbbször nem felelnek meg, így mára jobbára kiszorultak a termesztésből. Előnyös tulajdonságaik (betegség-ellenállóképességük, gazdag ízviláguk, jó beltartalmi értékeik, változatos színük és alakjuk) miatt azonban feltételezhető, hogy egyes tájfajták jól megállnák a helyüket a hazai ökológiai termesztésben. E feltételezés vizsgálatára indítottuk el a közép-magyarországi paradicsom tájfajtákat összehasonlító kísérletünket.

The organic food market is developing dynamically in many European countries and therefore studies concerning the nutritive value of organically produced foods are becoming increasingly important. It was found appropriate to conduct studies on selected bioactive substances and antioxidant properties of apple preserves prepared from organic vs. conventional apples. A kenyérgabona termesztése évezredes hagyománnyal rendelkezik. A jó minőségű étkezési gabonák a hazai szántóföldi termesztés legfontosabb exporttermékei. Így van ez az ökológiai gazdálkodáson belül is, ahol jelenleg közel 20 ezer hektáron termesztenek biogabonát. A termés mintegy felét az őszi búza és a tönkölybúza teszi ki.
