Supposedly beneficial nutritional compositions were found in organic milk. Studies report that the consumption of organic milk products affects health eg. prevention of eczema in children. Single cases describe a better digestibility of organic milk for consumers suffering from diverse atopic disorders and food allergies. To clarify whether this is a real phenomenon, a survey in combination with interviews was carried out on bio-dynamic milk farms and with affected consumers in Germany. The results show that there are consumers which are buying fresh bio-dynamic raw milk because of a better personal digestibility. |

From 36 different plants, screened for antimicrobial acitivty in a Radial Diffusion Assay, 8 were selected for further testing in meat products. The 8 different plants (black chokeberry, blackthorn, lingonberry, redcurrant, sage, summer savory, wild garlic and horseradish) were initially tested in a meat slurry test system as single antimicrobials and in different combinations of three to four plants. The 8 plants and he most effective combinations were subsequently tested in pilot-plant produced meat products. The results and the potential use of these 8 plants for preservation of meat products is discussed. |

Food quality has become an important topic in the food market. Thus, suppliers have started offering conventional products including additional quality attributes, such as “free from GMO” or “free from additives”. We analysed the preferences and buying behaviour regarding such conventional “low-input” products in competition with conventional and organic product alternatives in consumer choice experiments in Germany and Switzerland. Ziel der 1998 in jeweils drei Klein- und Großstädten durchgeführten Verbraucherbefragung war es, offensichtlich gewandelte Einstellungen zum Fleischverzehr für unterschiedliche Marktsegmente und unter differenzierten thematischen Aspekten offenzulegen. Ein thematischer Schwerpunkt der Befragung lag auf den Einstellungen der Verbraucher zur Prozeßqualität, das heißt den Erzeugungsbedingungen von Fleisch. This study aims to explore consumers´ attitude toward a new preservation technique using herbs and berries in organic meat production. This seems relevant both for the organic as well as the conventional meat producers, as this technique enable the organic producers to reduce the salt content in meat products and for the conventional producers to minimize the amount of chemical additives. In this paper we present an experiment that tests the possible effect of adding the short type of "story" that is possible on a food label to variations of a product that is differentiated by its ingredients and way of production. We conduct an experiment where consumers have to choose from products consisting partly of this new type of product, partly of conventional products well known to consumers. We find that that while some consumers – especially those seeking stimulation and with a tendency towards variety seeking – will favor the new product, others will remain uninterested. Um die Meinung von Krankenhauspatienten zur Qualität ihrer Verpflegung und zu ihrer Einstellung zu Bio-Lebensmitteln zu ermitteln, wurde vom Freiburger Institut für Umweltmedizin und Krankenhausyhgiene eine Umfrage durchgeführt (gefördert durch das Bundesprogramm Ökologischer Landbau). An der Umfrage beteiligten sich 1.500 Patientinnen und Patienten von 25 Akut- und Rehakliniken aus der Umgebung des Universitätsklinikums Freiburg. Auch die Verwaltungen konnten Ihre Meinung äußern.
