Konsum ökologischer Milch aus gesundheitlichen Gründen - Eine qualitative Erhebung auf deutschen Demeter Milchviehbetrieben und bei ihren Kunden 21
Kusche, D.; Sahm, H.; Baars, T..
Supposedly beneficial nutritional compositions were found in organic milk. Studies report that the consumption of organic milk products affects health eg. prevention of eczema in children. Single cases describe a better digestibility of organic milk for consumers suffering from diverse atopic disorders and food allergies. To clarify whether this is a real phenomenon, a survey in combination with interviews was carried out on bio-dynamic milk farms and with affected consumers in Germany. The results show that there are consumers which are buying fresh bio-dynamic raw milk because of a better personal digestibility.

The use of natural herbs and berry for preservation of organic meat products 21
Hansen, Flemming; Jensen, Martin; Grevsen, Kai.
From 36 different plants, screened for antimicrobial acitivty in a Radial Diffusion Assay, 8 were selected for further testing in meat products. The 8 different plants (black chokeberry, blackthorn, lingonberry, redcurrant, sage, summer savory, wild garlic and horseradish) were initially tested in a meat slurry test system as single antimicrobials and in different combinations of three to four plants. The 8 plants and he most effective combinations were subsequently tested in pilot-plant produced meat products. The results and the potential use of these 8 plants for preservation of meat products is discussed.

Potential of X-Ray Spectrometry and Chemometrics to Discriminate Organic from Conventional Grown Agricultural Products 21
Bortoleto, Gisele G.; De Nadai Fernandes, Elisabete A.; Tagliaferro, Fábio S.; Ferrari, Angela A.; Bueno, Maria Izabel M. S..
This work describes an innovative analytical method based on X-ray spectrometry combined with chemometrics which presents high potential to discriminate conventional from organic grown tomatoes and coffee beans. This novelty is based on the irradiation of samples in a bench-top EDXRF equipment provided with a Rh tube and further treatment of the spectral data using Principal Component Analysis (PCA). Multivariate analysis results showed a tendency in separating the samples according to the production mode (organic or conventional). Regarding the spectra obtained, the K alpha peak of potassium showed to be the most responsible for discriminating different categories of samples. The chlorine K-alpha peak presented high capability in discriminating tomato and...

Bestimmungsgründe für die Präferenz von Bio- und Low-Input- Lebensmitteln 21
Stolz, Hanna; Stolze, Matthias.
Food quality has become an important topic in the food market. Thus, suppliers have started offering conventional products including additional quality attributes, such as “free from GMO” or “free from additives”. We analysed the preferences and buying behaviour regarding such conventional “low-input” products in competition with conventional and organic product alternatives in consumer choice experiments in Germany and Switzerland. In the experiments, we tested milk, yogurt and apples. The choice experiments were combined with face-to-face interviews in order to collect information about the participating consumers, which might explain the buying behaviour observed in the choice experiment. We found that low-input products rather compete with...

Consumer attitudes toward new technique for preserving organic meat using herbs and berries 21
Haugaard, Pernille; Grunert, Klaus; Hansen, Flemming; Jensen, Martin.
This study aims to explore consumers´ attitude toward a new preservation technique using herbs and berries in organic meat production. This seems relevant both for the organic as well as the conventional meat producers, as this technique enable the organic producers to reduce the salt content in meat products and for the conventional producers to minimize the amount of chemical additives. Consumer acceptability toward the preservation technique using herbs and berries and further the willingness to buy products preserved with herbs and berries were exploited through a qualitative approach by means of three focus groups. We found that in general, most of the participants are positive toward the preservation technique using herbs and berries and there are...

Delicious words - assessing the impact of short storytelling messages on consumer preferences for variations of a new processed meat product 21
Fenger, Morten; Aschemann-Witzel, Jessica; Hansen, Flemming; Grunert, Klaus.
In this paper we present an experiment that tests the possible effect of adding the short type of "story" that is possible on a food label to variations of a product that is differentiated by its ingredients and way of production. We conduct an experiment where consumers have to choose from products consisting partly of this new type of product, partly of conventional products well known to consumers. We find that that while some consumers – especially those seeking stimulation and with a tendency towards variety seeking – will favor the new product, others will remain uninterested. We then test whether the introduction of an additional element of storytelling, on top of the information on ingredients and process, has an effect on choice. We find...

Hansen, Flemming; Jensen, Martin; Grevsen, Kai; Fenger, Morten.
The overall objective of the project was to increase the portfolio of organic meat products for the consumer, by supplying new products preserved by organic grown herbs and berries. The consumers will benefit from a growing range of new, attractive, organic meat products, the Danish producers of organic meat products will benefit form a growing market and the producers of organic herbs and berries will experience an increasing demand for organic grown herbs and berries. The project has been consumer driven, as the project initially investigated the attitude of the organic consumer to this new way to produce organic meat-products. Also at the end of the project, the consumer acceptance of the resulting two new meat products (dices of ham, with garlic &...

Promoting Organic Food in Public Catering: A Theory Based Approach to Sustainable Public Catering Systems 21
Mikkola, M.; Mikkelsen, B. E..
The paper focuses on public catering as a significant service provider in the modern society and a potential large scale user of organic food. In order to argue for the use of organic food by public catering, the traditional nutrition oriented public catering is reframed and repositioned as sustainable public catering system, responsible in mediating the well-being of both bio-physical environment and individual consumers. The repositioning is based on theory of ecological communication within social systems by Niklas Luhmann. The development towards sustainable public catering systems is examined by analysing Danish and Finnish public catering cases, which make visible the role of economy, law, science, politics and education in contextual networks...

Looking East Looking West: Organic and Quality Food Marketing in Asia and Europe 21
Haas, Rainer; Canavari, Maurizio; Slee, Bill; Chen, Tong; Anurugsa, Bundit.
This book represents a unique collection of European and Asian perspectives on the production, trade and consumption of high quality food. The rapidly growing demand for organic and quality food in Europe imposes new challenges on competing food value chains. Europe, as the biggest worldwide food importer, attracts many developing and developed countries in Asia. Prospering Chinese and Thai food markets offer new opportunities for European operators. Wealthy and informed consumers on both continents search for trustworthy high quality food products. Farmers, operators and retailers from distant cultures are coping with different standards, facing the ever increasing necessity for mutual understanding. This publication is the output of Bean-Quorum an...

Organic school meal systems – towards a more sustainable nutrition 21
Løes, Anne-Kristin; Nölting, Benjamin.
Nutritional and health problems related to life style alarm European governments. The interest in school meals as a lever for change is increasing because young people reside longer in public institutions and their often unsatisfactory eating patterns might be counterbalanced by healthy school food. Organic food contributes to sustainable nutrition, and hence is an interesting starting point for healthier menus and food education. The research project ‘innovative Public Organic food Procurement for Youth’ (iPOPY) studies efficient ways to implement organic food in public serving outlets for young people. The project has four explorative work packages studying policies, supply chains and certification, the young consumers’ perception and learning about...
