The quality of dried meat products and the drying kinetics significantly depends on the status of the raw material going into the drying process. The aim of this study was the determination of the impact of meat status (fresh, mature, frozen-thawed) on the drying kinetics and the resulting quality in terms of colour changes and spectrally deductible information. Drying tests were conducted using meat from organically raised bulls. In fresh meat, freezing leads to a decrease of the drying rate, whilst for matured meat the opposite is true. Aging and freezing have little effect on the end product quality in terms of final product colour. Tomatoes (Solanum lycopersicum) are one of the most consumed vegetables worldwide. However, tomato allergies in patients suffering from birch pollen allergy occur frequently. Due to highly similar protein structures of the tomato allergen Sola l 4 and the major birch pollen allergen Bet v 1, patients cross-react with allergenic proteins from tomato as well as other fruits or vegetables. Consumer trust in the food industry is heavily reliant upon accurate labelling of meat products. As such, methods which can verify whether meat is correctly labelled are of great value to producers, retailers, and consumers. This paper illustrates two approaches to classify between, fresh and frozen thawed, and in a novel manner matured and matured frozen-thawed, as well as fresh and matured beef using the 500-1010 nm waveband, captured using hyperspectral imaging, and CIELAB measurements. Direct heat treatment of two milk types, skimmed and non-standardised, was performed by instant steam infusion and compared with indirect heating. Infusion conditions were temperatures of 72-120°C combined with holding times of 100-700 ms, and indirect heat conditions were 72°C/15s and 85°C/30 s. The activity of indigenous enzymes; alkaline phosphatase, lactoperoxidase, xanthine oxidase and -glutamyl transpeptidase was evaluated. Mainly the infusion temperature was determinant for inactivation. Whey protein denaturation represented by -lactoglobulin increased significantly with infusion temperature. The effect ofdipping and vacuum impregnation (VI) pretreatments with lemon juice solution on the quality and stability of organic and conventional frozen apples was investigated. Fresh apples were characterized; organic apples showed, at equal starch and ripeness index, a lower sugar content, and higher acidity than conventional ones. The polyphenol content was slightly higher in organic apples than in conventional ones while polyphenoloxidase activity was similar. No differences in color and firmness were evidenced. Durch die Verwendung der D. batatas können Mehlmischungen in ihren sensorischen, physiologischen und gesundheitlichen Eigenschaften aufgewertet werden. In der Bio Branche gibt es eine Vielzahl an Mehlmischungen für Back- und Teigwaren aus Mais, Kartoffel, Reis, Soja und Buchweizen, hier werden oft Zusätze wie Johannisbrotkern- und Guarkernmehl verwendet. Die D. batatas wird bereits in Deutschland nach den Richtlinien des ökologischen Landbaus im Freiland angebaut. Die Eignung aus Japan stammender Möhren (Daucus carota L. var. Nutri Red) für ökologischen Anbau und Bio-Saftherstellung nach gewerblichen/industriellen Standardverfahren wurde im Rahmen des Projektes geprüft. Diese Möhren enthalten das gesundheitsfördernde Carotinoid Lycopin, das sonst fast ausschließlich in Tomaten vorkommt. Die Carotinoidgehalte der frischen Möhren (Lycopin, Beta-Carotin, Phytoen, Phytofluen) bleiben während der Saftherstellung nach einem Standardverfahren weitgehend erhalten; cis-Isomere des Lycopins entstehen nicht.
