Tailoring bilberry powder functionality through processing: effects of drying and fractionation on the stability of total polyphenols and anthocyanins. Organic Eprints
Oliveira, Gabriel; Eliasson, Lovisa; Ehrnell, Maria; Höglund, Evelina; Andlid, Thomas; Alminger, Marie.
Bilberries are a rich natural source of phenolic compounds, especially anthocyanins. The press cake obtained during the processing of bilberry juice is a potential source of phytochemicals. The objective of this study was to evaluate different drying techniques and the fractionation of bilberry press cake powder toward obtaining phenolic-rich ingredients for incorporation into value-added food products. The derived powders were dispersed in water and dairy cream, to investigate the effects of drying and fractionation on the dispersibility and solubility of phenolic compounds. The drying techniques, hot air drying and microwave drying, applied on bilberry press cake reduced the content of total phenolics and anthocyanins. The degradation was, however,...

LIVING ON FARM – A NEW APPROACH OF COMMUNITY SUPPORTED AGRICULTURE (CSA) Organic Eprints
Schäfer, Winfried.
The development of living on farm is described from an agricultural engineer's point of view focussing on opportunities for elderly in Finland. There are three main groups: Anthroposophical social farms, farms governed by a strict ecological philosophy of life, and farms looking for diversification concerning ecology, business and on-farm living communities. However, the boundaries between these groups are fluid. The farms may create additional income by offering accommodation, janitorial and transport services, basic and other services to people, who want to live on the farm. Thus, the traditional target of community supported farms - processing and selling the farm products to a community of customers - is considerably extended. In the long run, the...

AN ORGANIC AGRICULTURE MODEL FOR TURKEY Organic Eprints
Aslan, Bulut; Demir, A. Yonca.
Organic farming presents a solution to socio-economic, environmental and health problems caused by conventional food production methods. In this paper, we propose a linear programming model to plan Turkey’s organic food production. Specifically, we want to find how many hectares of each food type should be planted in each municipality of Turkey so that the whole population consumes organic foods only. The model incorporates transportation between regions while identifying any missing or excess foods. We also describe the data requirements of the model and discuss data availability. Results on an aggregate (small) model are promising.

Effect of drying and extrusion processing on physical and nutritional characteristics of bilberry press cake extrudates Organic Eprints
Höglund, Evelina; Eliasson, Lovisa; Oliviera, Gabriel; Almli Lengaard, Valerie; Sozer, Nesli; Alminger, Marie.
Mild drying and extrusion processing of side streams from berry juice production can enable retention of valuable compounds in the food chain and reduce waste production. The aim of this study was to evaluate the applicability of using hot air (HA) and microwave assisted hot air (MWHA) drying combined with extrusion for conversion of bilberry press cake into value-added extruded food products. Bilberry (Vaccinium myrtillus L.) press cake was dried at 40 °C by HA and MWHA drying to a moisture content of 17% (w/w). A twin screw extruder (average feed rate 72 g/min, temperature profile 135-128-89-69 °C) was used to extrude products containing organic wholegrain rye flour and 10 % or 25 % dried bilberry press cake powder. A consumer panel (n = 15) evalutaed...

Promising water treatment practices with peracetic acid products Organic Eprints
Pedersen, Lars-Flemming; Jokumsen, Alfred; Larsen, Villy J.; Henriksen, Niels Henrik.
Peracetic acid products can be used as sanitizers to control water quality in aquaculture systems. Here we describe recent practical experiences of applying peracetic acid (PAA) as an alternative to formalin or sodium chloride. PAA has strong antimicrobial effect, it is easy degradable and relatively safe to use work-wise. Being a strong oxidant, PAA resembles ozone in its mode of action and the associated rapid decay. This can be a challenge towards optimizing treatment protocols, and continuous low dose applications seem to be a promising solution. PAA is listed among the few disinfectants to be approved to be applied in organic aquaculture where formalin is prohibited (EU, 2014a). As of January 2016, organic trout production fully depends on organic...

Ecosystem Functions and Services of Biodiversity in Grasslands Organic Eprints
Multifunctionality with positive effects on nature and society is a central element of organic agriculture, and a high biodiversity is essential for this. Grassland has the greatest potential for providing this service, but the organic fields are large and biodiversity is low. The purpose of this project is to increase plant biodiversity in grassland and significantly improve ecosystem functions and services in the nature-farmer-consumer chain and for society, and thus also increase the market value of organic products. We will: 1) design and demonstrate productive and biodiverse grassland with squares of flowering plants, 2) improve conditions for bees and other pollinators using flowering grasslands for hay or silage, 3) increase carbon sequestration via...
