Differences in WTP and Consumer Demand for Organic and Non-GM Fresh and Processed Foods AgEcon

Auction experiments were used to examine demand and premium differences between organic, non-GM (genetically modified), and conventional versions for two pairs of fresh and processed foods. Results showed processed foods had greater substitutability among the versions than fresh products. Conventional versions were the least price sensitive, while non-GM versions were the most sensitive. Significant premium differences were found between fresh and processed foods for sweet corn and tortilla chips, but not for potatoes and potato chips. Results from random effects models mirrored these findings. In general, the extent of premium differences between fresh and processed versions appears dependent on the food product.

Analysing Linkages between Strategy, Performance, Management Structure and Culture in the Spanish Fresh Produce Industry AgEcon

This article reports the results of an industry-level study that seeks to identify empirical regularities between firm strategy, management style, organisational structure and performance in the Spanish fresh fruit and vegetable (fresh produce) industry using strategic group analysis. Groups were formed from key dimensions reflecting firms' strategic orientations. Performance levels did not differ systematically between strategic groups, but performance was found to be influenced by the alignment between entrepreneurial culture and organisational structure. A move towards greater flexibility and/or adopting an entrepreneurial style are both likely to contribute to an improvement in the overall performance of the firm.

De Gustibus Asparagus: Habits, Trade, and Welfare from Out of Season Imports of Fresh Vegetables AgEcon

Fresh vegetables, including asparagus, are now available in months outside of the domestic growing season for most U.S. consumers. We use the virtual price method to calculate the equivalent variation for increased availability in a demand system for fresh and frozen vegetables and find that virtual price of out-of-season asparagus is roughly 3 times higher than its in-season price in years prior to year round availability. We find the equivalent variation between 1986-1991 (when asparagus was available approximately half the year) and 1993-1999 (when it was available year round) to be 0.91 of consumer vegetable budgets, implying a welfare benefit of approximately $86 million annually.
