Fruit and Vegetable Consumption among College Students in Arkansas and Florida: Food Culture vs. Health Knowledge AgEcon

This study determines the impact of demographics, dietary and health knowledge, and food culture on fruit and vegetable consumption of college students in Arkansas and Florida. Our empirical analysis demonstrates that food culture significantly impacts consumption of fruits and vegetables; a finding which emphasizes the need to target cultural aspects when developing effective and efficient management of agribusiness firms. Understanding the antecedents to consumption for products like fruits and vegetables is important to agribusiness industry, policy makers and organizations interested in evaluating the effectiveness of health education in promoting college students' health and decreasing the trends to obesity.

Recently, there has been considerable interest in estimating food demand structure in China due to its huge market for food products. Previous literature has focused on the primary food products such as grains and meats, but studies on fruits and vegetables are limited. To fulfill this gap, this paper investigates the changes of fruit and vegetable consumption in Chinese urban households between 1993 and 2001. Promoting Fruit and Vegetable Consumption: Are Coupons More Effective Than Pure Price Discounts? AgEcon

The U.S. Department of Agriculture administers food and nutrition assistance programs that promote fruit and vegetable consumption. But consumption remains relatively low among program recipients as well as among the general U.S. population. The perceived high cost of produce is often cited as a deterrent to more consumption. This study looks at coupons and price discounts, two methods of lowering the cost of fruits and vegetables, and uses household purchase data and a consumer demand model to examine each method. Coupons influence consumer behavior through a price-discount effect and an informational/advertising effect. Facilitating healthy eating among young people, particularly among minorities who are at high risk for gaining excess weight, is at the forefront of the current policy discussions in the U.S. We investigate the effects of social interactions and relative prices on fruit and vegetable consumption by African American youths. We estimate a simultaneous equation ordered probit model of food intake using rich behavioral data from the Family and Community Health Study and price data from the Economic Research Service’s Quarterly Food-at-Home Price Database. How Much Do Fruits and Vegetables Cost? AgEcon

Federal dietary guidance advises Americans to consume more vegetables and fruits because most Americans do not consume the recommended quantities or variety. Food prices, along with taste, convenience, income, and awareness of the link between diet and health, shape food choices. We used 2008 Nielsen Homescan data to estimate the average price at retail stores of a pound and an edible cup equivalent (or, for juices, a pint and an edible cup equivalent) of 153 commonly consumed fresh and processed fruits and vegetables. We found that average prices ranged from less than 20 cents per edible cup equivalent to more than $2 per edible cup equivalent.
